Reflective of the cool 2001 vintage, this wine shows elegance and understated quantities, typical of the wines of Cordoba. This auction wine is a selection of the single best barrel of each variety from our small 3ha Mont Fleur vineyard, 380m up between the Stellenbosch and Helderberg mountains. The soil is a deep red Hutton with an ideal combination of good drainage and good moisture retention. The vines are planted to a relatively high density of 5000 vines / ha ensuring that each vine does not produce much more than 1kg. Matured for 18 months in new French oak. Tasting note: The perfectly ripe fruit shows in the deep colour and intense, complex nose. Rich, powerful wine with a long granular tannin finish.

53% Shiraz, 39% Cabernet Sauvignon, 8% Merlot Bottled under screw cap. Grapes were handpicked, kept in cold storage overnight, crushed the following day and placed in flagstone open top fermentors. Many experiments with different strains of yeast were carried out. Cold maceration on skins for up to two weeks. 4-hourly punch downs. Pressed to barrel, where malolactic fermentation took place. All barrels were tasted and the best were selected for this wine. Tasting note: Attractive deep red colour with classic aromas of ripe red plums, blackberries and strawberries. Core deliciously rich in vanilla with undertones of cinnamon and spice. New American oak, well integrated with fruit and spice. Prominent ripe tannins contribute to a well rounded finish in creamy elegance.

This wine should develop and improve for at least 8 years from vintage.

100% Shiraz The gravel hill is from a single vineyard site which reflects the unique position it occupies on Hartenberg estate. It is made up of pure red gravel stone on a lower slope of the property. This terroir consistently produces a wine unique in character, quality and expression. The wine spent 16 months in 100% small, 225 litre French oak, of which 60% was new, the balance being 2nd fill. Tasting note: Black, deep centred colour. Perfumed violet and vanilla oak mixed with pepper and spices on the bouquet. Mouthfeel shows clean primary fruit with succulent, elegant mid palate and a refined finish.

82% Cabernet Sauvignon, 10% Cabernet Franc, 8% Merlot A blend of the best cobblers hill barrels and a reserve cabernet sauvignon, this wine has been named "Sophia" after the legendary mother of faith, hope and charity. Representing the characteristics of the 3 Bordeaux varieties that make up this exceptional wine, the cabernet sauvignon, cabernet franc and merlot were harvested from the best hillside vineyards at Jordan, with views looking out over Table Mountain and False Bay. Fermented at 28°c with 3 pump-overs daily over the fermenting cap. After pressing, the wine was racked to barrel where it completed malolactic fermentation. The wine spent a total of 26 months in 225 litre French oak barrels. Tasting note: Complex, dark chocolate, black cherry and cassis intertwine with rich black berry fruit and hints of vanilla and spice from the integrated French oak. Densely layered ripe tannins add to the opulent finish. Well structured, this wine will reward careful cellaring for many years to come.

After malolactic fermentation, the wine went to new French oak barrels for 19 months. 50 cases of this wine were sold at the 2003 auction. Tasting note: Young and complex. A dark regal ruby colour. Layers of sweet blackcurrant, mulberry, cherry and chocolate fruit with lovely spicy oak. The texture is smooth and silky with a long, full finish. Rich in flavour, showing a little gaminess in the finish.

Tasting note: The wine has an excellent colour concentration of dense ruby red. Perfumed nose of fresh blackcurrant and blueberry fruit, enveloped in spicy new French oak. Voluptuous melange of ripe fruit flavours in a cloak of oak and soft, ripe, tannins augur well for ageing.

The wine was made in the traditional way in open fermentors and colour and flavour was extracted by punching the cap by hand. At a recent tasting of Paul saucers (20 vintages) from 1981 to 2001, the 2001 vintage was the joint winner with the 1995. Tasting note: A full bodied classic red blend with a dark red colour. An excellent vintage that shows loads of berry fruit on the nose and taste which is well integrated with the oak flavours. A complex wine that will age in the bottle for at least ten years and more.

100% Cabernet Sauvignon Sorting was done in the vineyard, followed by berry selection in the cellar before crush. The grapes were fermented with inoculated yeast (WE372) and pumped over three times per day. Fermentation was at 31°c and lasted five days. Extended skin contact lasted a total of 18 days. The wine underwent malolactic fermentation in barrel. Only new French oak barrels were used, all Vicard prestige barrels. The wine was racked three months later. The wine matured in barriques for 23 months. The wine is unfiltered and received only an egg white fining before being bottled. Tasting note: A nose of great depth, with elegant lead pencil and cassis flavours. Very attractive bouquet of violets and cedary cigar box notes. The tannins on this wine are big and velvety. This plummy, cassis fruit cabernet reflects the elegance of the 2002 vintage. The long finish is firmed up by very ripe tannins, culminating in a truly classic cabernet.

100% Chenin Blanc The botrytised grapes were hand-picked from old bush vines on the mornings of 15 and 16 April 2003, and were berry selected using a vibrating sorting table. The yields were 1,9 tons per hectare (7hl/ha) with acids above 9,2g/l and ph generally below 3,1. A total of 989 x 375ml were made. The grapes were lightly crushed and the juice was allowed to settle overnight. New French barriques were filled and allowed to ferment with the natural yeast, using the indigenous microflora on the grapes. Fermentation took place in a 14°c cellar but actual fermentation temperatures were not monitored. Fermentation was completed two months later, after which the wine was sterile filtered before being bottled. 60 cases of this wine were sold at the 2003 auction. Tasting note: Bright yellow-gold with green tinge. Mango, paw-paw and dried fruit on the nose. Peach kernels, honeyed botrytis character follow the palate with floral, waxy Chenin Blanc fruit and a long grapefruit finish.

Very tight, with substantial structure promising great maturation potential. A classic expression in the perfumed Rhone style.

Pinot noir brings red grape fullness to the cuvée. Four years on the lees before degorgement gave the wine ample time to develop further complexity. 66 cases of this wine were sold at the 2003 auction. Matured in 100% new Taransaud Allier barrels for 16 months. Blended with 15% Bordeaux varieties to enhance berry fruit. The perfect wine to add variety to your cellar and spice to your life! Tasting note: Deep colour with almost black centre. Black berry fruit with savoury pepper flavours. Spicy vanilla oak adds to the complexity. Densely packed wine with full bodied structure which will reward a few years in the cellar.

In keeping with Vinfruco’s commitment to partnerships with their producers and nature, these sauvignon Blanc grapes were selected from a single vineyard of the Tullie family. Tasting note: The expressive sauvignon Blanc shows its cool origins in ripe gooseberry and flinty flavours with a crisp and long finish.

100% Cabernet Franc This wine is a mix of 6 different clones from our cabernet franc vineyard at Vriesenhof. Bunch selection and berry selection took place before fermentation. The wine underwent alcoholic and malolactic fermentation in new wood from Bordeaux coopers and was bottled after 18 months in barrel. Tasting note: A medium-bodied wine with firm berry and cassis aromas as well as a little charring at the back. On the palate, the wine shows firm elegant fruit with the wood as the support base.

100% Pinot Noir: 40% Clone 115a, 60% Clone 777 Both clones 115a and 777 were fermented in open fermentors and the cap was pushed back into the juice 4-5 times per day. The alcoholic, as well as the malolactic fermentation, was completed in new Burgundian oak and the wine bottled in December 2003. Tasting note: This blend of two clones from granite soil shows a strong earthy, mushroom, forest floor character, with the wood still dominating on the nose. The mouthfeel is broad, soft and creamy and shows firm woodiness which will integrate in time.

40% Cabernet Sauvignon, 28% Shiraz, 12% Mourvèdre, 10% Merlot, 6% Cabernet Franc, 2% Petit Verdot, 2% Malbec In search of the best expression of the Waterford estate vineyards - cabernet sauvignon (40%), shiraz (28%), Mourvèdre (12%), merlot (10%), cabernet franc (6%), petit Verdot (2%) and Malbec (2%) were used in this assemblage. Aged in new and used 225 litre French oak barriques for 14 months. Egg white fined and bottled for the 2004 cape winemakers guild auction. Tasting note: Beautiful deep ruby colour. Aromas of ripe plums combined with nuances of tobacco and white pepper. Layered flavours of liquorice and dry lavender, followed by lovely lengthy dry tannins. Refined length on finish.
