Ataraxia Chardonnay 2006
Winemaker: Kevin Grant (Ataraxia)
 
This wine is the product of two individual and unique vineyard sites situated along the R320, Hemel-en-Aarde. Soils from these sites are derived from well-drained Table Mountain sandstone which overlay intrusions of clay rich shale from the bokkeveld group. Because of the cool climate that exists in this valley, the grapes were required to hang long on the vine in order to reach optimum ripeness. Picked during the early hours of the morning in the first week of March 2006, the grapes were rushed to the celler to ensure that all the exciting fruit flavours were preserved and reflected in this wine.

Tasting Notes
A minimalist, non-interventionist winemaking approach was adopted. It is 100% barrel fermented and carefully matured in specially selected small French oak barriques sourced exclusively from Burgundian coopers. Fortnightly Bâtonnage was employed throughout the 10 month maturation period. The result is a Chardonnay that is New World in provenance but Old Word in stylistic leaning. A chiselled, focused wine that effortlessly manages to be both subtle and intense. It has a core of fiercely expressive grapefruit, white flowers, pear and grilled almond aromas and flavours. The palate is penetrating and enduring yet remains graceful and poised. A bright acidity and soil-derived minerality adds to the classic length and complexity of this stylish, classy chardonnay

Harvested in May 2006, this Noble Late Harvest was fermented with a selected Sauternes strain and spent a total of thirteen months in a new French oak barrique.

Boplaas Auction Vintage Reserve Port 2005

This blend of 75% Touriga Naçional, 20% Tinta Barocca and 5 % Souzăo was matured for one year in 500 litre Portuguese oak pipes and has the potential to mature in the bottle for 20+ years. This was judged South Africa’s Champion Port at SANW 2005

Tasting Notes
Rich, golden colour. Lovely dried peach and vanilla flavours with a long, lingering finish. A brandy that my great grandfather, who exported to London in 1880, would have been proud of.

The grapes were harvest fully ripe, destalked and fermented in 500 litre barrels. Natural fermentation with regular punch downs. After alcoholic fermentation the wine was left on skins for 28 days. Matured in new 225 litre French oak (92%) and American oak (8%) barrels.

Tasting Notes
Beautiful violets and ripe mulberry fruit on the nose. Layers of dark fruit - white pepper and oriental spices. Long finish with soft ripe tannins and good wood fruit balance. Very good ageing potential.

Skin contact for 8 hours. Just free run juice used. Cold fermented in stainless steel. 25% fermented is new French oak for 4 months before it was blended to show fresh Semillon fruit with creamy lees charter. Bottled under screwcap

Tasting Notes
Distinctive cool-climate minerals, nettles, fig and dusty dry fynbos express Elim provenance. Small proportion fermented in new French oak has added complexity and length with smoky bacon aromas. Firm acidity for mouth watering freshness. Ideally suited to food, but good enough for solo enjoyment.

A selection of two of our best barrels. 1 new 400 Litre French oak from VVB Cooper in the Loire and the other older 225 Litre barrel – natural fermentation after 4 hours skin contact and traditional basket pressing. No malolactic fermentation, 10 months in barrels. Bottled unfiltered after light bentonite fining. 70 cases were sold at the 2005 Auction.

Tasting Notes
Attractive yellow colour. Toasty oak and smoky, mineral character with underlying dried peach nose. Big, full palate with white peach flavours and leesy richness.

Edgebaston G.S. Cabernet Sauvignon 2005

This small batch of hand selected Cabernet Sauvignon was fermented in a 3000 Litre tank and punched down 3 times a day to extract the maximum colour and tannins. The wine spent 20 days on skins undergoing malolactic fermentation and was then matured in 2 new French oak hogsheads (300 litre) for 18 months before bottling.

Tasting Notes
Deep red colour. use is complex with hints of mint, mulberry, vanilla, nutmeg and almond. Smooth entry on palate, chocolate mocha coffee and cassis backed up with crisp acid and tannin backbone. Long finish promises good aging potential

Engelbrecht Els CWG 2005

The concept is to produce a wine made up of three different varieties that reflect the unique diversity of the Stellenbosch terroir. The different cultivars each lend their individuality to the blend - Cabernet Sauvignon gives structure and aging potential; Shiraz adds spice and palate weight and Merlot allows for integration.

Tasting Note
Appearance: bright deep ruby.
Bouquet: the complex aroma of this delicious wine is dominated by the red berry flavours and supported by some cedar, vanilla spice from the barrels. The cumin spice, almond and candy floss complement the aroma of the wine.
Palate: the aroma of red berries and plum follows through onto the palate. Dark chocolate, mocha and fruit cake fruit flavours enchant the mid-palate, complemented by a spicy oak finish. The elegant tannin structure ensures a juicy mouth feel.

The Chenin Blanc was crushed and pressed straight to barrel where it was fermented wild. It was left on the lees after fermentation. 15% Sauvignon Blanc from Elim was blended in straight from tank. 100% American oak, new. Bottled under screwcap.

Tasting Notes:
On the nose, pineapple, litchi and crisp tropical hints, with the undertones of cinnamon and vanilla and lime. The nose follows through to the palate with a nice creamy fullness, finishing with a fresh citrus crisp that lingers.

Flagstone Weather Girl 2006

The Sauvignon Blanc and Semillon both originate from the Moddervlei farm in the Elim area. The grapes were hand picked during February and March at optimal ripeness. Lots were either whole bunch pressed or crushed and left to cold soak for 12-24 hours. The cultivars were fermented separately in stainless steel tanks, using a variety of different yeasts. Post fermentation lees contact took place in tank after which the wines were racked off the lees and blended. 40 cases were sold at the 2006 Auction. Bottled under screwcap

Tasting Note
A very characterful, complex wine with strong green fig, capsicum and litchi aromas. The wine has a substantial palate that is well balanced with a long supple finish.

The Cabernet Sauvignon grapes were fermented in open tanks for 10 days. Punch downs occurred three to four times per day. The Merlot was fermented in a closed tank and spent 14 days on skins after malolactic fermentation. The wines were blended and matured in new French oak barrels for 22 months.

Tasting Notes
Clear, deep crimson red colour. Entry on nose and palate, with wafts of ripe cherry and plum linked to tobacco leaf and cigar box characters. The palate is powerful with rich ripe mulberry fruit, vanilla spice and fruit nuances. Finishing off with a huge tannin structure.

Medium-dark ruby colour with garnet edge; complex black berries, violets, vanilla and cedar aromas & flavours; well-rounded wine with fine balance of fruit and oak; smooth tannins with a lively acidity giving the wine a youthful impression for a 1995; long, slightly spicy finish.

Hartenberg Gravel Hill Shiraz 2004

This is the eighth vintage of Gravel Hill and also the longest running wine on Auction. The wine originates from a unique site on the lower slopes of the estate. The terroir consistently produces a wine of unique character, quality and expression.

2004 Gravel Hill had the smallest Shiraz berries ever seen on the estate. A full MLF was undertaken in barrel. The wine spent 17 months in 100% new, small, French oak barrels.Bottling occurred on 29 November 2005.

Tasting Notes
Dark-centered ruby-black rim. Bouquet is loaded with aromas of violets, white pepper, black and red berry fruits. The palate is all iron fist in velvet glove, sweet ripe fruit, and creamy, rich dry tannins make for a 10-15 haul.

Hartenberg Loam Hill Merlot 2005

A Merlot selected from our very best of the varietal and select parcels of the supporting acts. The grapes were hand sorted, fermented and macerated on the skins for 15 days, with Italian yeast and given 100% MLF in small French oak. After 20 months in the new wood and three rackings a year, the wine was lightly filtered and bottled on 29 November 2006.

Tasting Notes
Dark black-red in colour. The bouquet has a complex mix of ripe plums, violets, cherries and aromas of coffee, vanilla and choc from the wood. On the palate the wine is silky, has bags of black fruit, sweet, ripe fine dry tannins and a lingering edgy finish.

Jordan Sophia 2005

This wine has been named “Sophia” after the legendary mother of Faith, Hope and Charity. Representing the characteristics of the three Bordeaux varieties that make up this exceptional wine, the Cabernet Sauvignon, Cabernet Franc and Merlot were harvested from the best hillside vineyards at Jordan, with views looking out over False Bay and Table Mountain. Fermented at 28˚C with pump-overs daily over the fermenting cap. After pressing, the wine was racked to barrel where it completed malolactic fermentation. The wine spent a total of 26 months in 225 litre French oak barrels

Tasting Notes
Complex, dark chocolate, black cherry and cassis intertwine with rich blackberry fruit and hints of vanilla and spice from well-integrated French oak. Densely layered ripe tannins add to the opulent finish. Well structured, this elegant wine will reward careful cellaring for many years to come.

Jordan Chardonnay Auction Reserve 2006

Crushing and pressing of this special selection of grapes from the Nine Yards Chardonnay vineyard took place immediately after destemming. The juice was barrel fermented in traditional 228 litre French oak barriques using natural yeast from the vineyard. Fourteen months oak maturation and regular barrel rolling to accentuate the rich, leesy character has added complexity to this wine specially made for CWG Auction

Tasting note
This reserve Chardonnay has intense, minerally lemon and lime flavours with hints of butterscotch and vanilla. The full, rich mouthfeel and balanced toasty oak integrates well with the tropical fruit finish.

Tasting Notes:
Dense, plum-coloured Cabernet with a youthful pink rim. The nose shows subtle berries with prominent red cherry fruit, touches of Cabernet grassiness, and a hint of fragrant violet. The oak is very much a supporting act to centre-stage fruit. The palate is in complete harmony with softly rounded dark berry fruit, fleshy and full in body. Well integrated oak has lent some attractive cigar box touches and helped tannins to soft softness and approachability.

The three cultivars were vinified and aged separately in small French oak barrels separately. They were blended together after 22 months in French oak.

Tasting Notes
Very dense dark ruby with a brooding, black centre; massively structured with powerful tannins and serious oak treatment harmoniously woven into a tapestry of richly fruited layers. Superbly crafted with plush dark fruit and tightly knit structure boding well for a long life. A long focused finish presently only hinting at the treasures to be revealed over the next 4 to 6 years and beyond.

Kumkani Cradle Hill Cabernet Sauvignon 2005

The fruit is from a single hillside vineyard in the Bottelary area. Full ripe fruit was hand picked in the second week of March 2005 and fermented in stainless steel tanks for10 days. After fermentation, the wine was aged in 300 Litre French oak barrels for 21 months. This wine was selected out of our best barrels and lightly filtered at bottling.

Luddite Dos Anos Shiraz 2004

Made using normal winemaking practises but with cooler fermentation temperatures to retain as much fruit as possible. Extra post fermentation time on skins allowed for maximum fine tannin uptake. Malolactic fermentation in tank followed by new French oak maturation for the first year. Blended and returned to third-fill French oak barrels for a further year. Unfiltered, unfined and unfiddled into bottle. 100 cases sold at the 2006 Auction.

Tasting Notes
Very decadent nose of toasty spice, chocolate and fruit. Entry to palate rich, dark berry, cloves, liquorice and chocolate. All these flavours are backed by fine grape tannins.

Barrel selection of our own vineyards matured for 24 months in 100% French oak of which 50% was new. 20% Cabernet Sauvignon was added to improve the overall tannin structure of the wine.

Tasting Notes
Vibrant spices and dark plum on the nose, this leads through to the palate. These dark fruits and cinnamon and clove spices are backed by fine tannins certainly has structure to age gracefully. The name of the wine alludes to my son’s incapacity to listen in class; as a result he got “Two for listening” out of five in his report card.

Neil Ellis Auction Reserve 2005

Careful fruit selection before traditional fermentation initiated
in stainless steel tanks. Further maceration allowed before drawing off and light pressing. Maturation in tight grained French oak for 21 months followed by rigorous barrel culling before bottling in January 2007.

Tasting note
Deep red, purple in colour, the wine has high-toned blackcurrant, violet and cedar aromas with touches of mint, so typical of a Jonkershoek wine. A rich, ripe opulent but youthful palate has plumy fruit, a background of new oak and fine tannins. This is a multi-faceted wine that needs time to mature.

Rudera Chennin Blanc Noble Late Harvest

The grapes were lightly crushed and the juice was allowed to settle overnight. New French barriques were filled and allowed to ferment with the natural yeast, using the indigenous microflora on the grapes. Fermentation took place in a 14˚C cellar but actual fermentation temperatures were not monitored. Rudera Chenin blanc Noble Late Harvest was finished with fermentation two months later and was sterile filtered before being bottled. 72 cases were sold at the 2005 Auction.

Tasting Notes
Distinct yellow hue; very rich honey bouquet. Amazingly full, scented nose with waxy ,mouth watering fruit salad and apples. Rich mouth-feel and layers of tropical flavours. The delicate yet firm smoky, oaky flavour expanding in the mouth. Fairly sweet and full; lovely texture and good length.

Steenberg The White Savage 2007

This wine is made from our best Sauvignon and Semillon vineyards. The grapes were harvested at 3am by machine. The Sauvignon Blanc was treated reductively and underwent a long cold fermentation in stainless steel tanks. The Semillon was barrel fermented in new French oak and left on the lees for 4 weeks. After skillful blending, the wine was gently prepared for bottling.

Tasting Notes
Wild and herbaceous with incredible mineral notes - full vibrant palate with sweet citrus characters coming from the Semillon portion. This wine is a true reflection of cool climate terroir and will benefit from careful cellaring.

Villiera Terre Rouge 2005

After years of sourcing red fruit in Devon Valley, the quality produced off the “red earth” was obvious. This 2005 Auction blend includes Cabernet Sauvignon and Cabernet Franc selected from the band of “red earth” in the area. The grapes were picked at optimum ripeness, crushed and destalked before transferring to a red wine fermentation vessel. Regular pump overs ensured good texture and colour. After gentle pressing the young wine was racked to new French oak barrels for malolactic fermentation. Evolution in the barrels was enhanced by three rackings and the wine was finally removed after 24 months before being bottled.

Tasting Notes
The wine displays an attractive dark red colour with intense aromas of dark berry fruit and a hint of spice and tobacco. The new oak makes a subtle contribution with nuances of vanilla and coffee on the palate. The wine is well balanced with ripe, dry tannins and a rich, long finish, ensuring sufficient structure for extended maturation.

This wine is a blend of clone 777 (60%) and clone 115 (40%), fermented in open fermenters with the cap pushed back into the juice 4-5 times per day. Alcoholic and malolactic fermentation was completed in new Burgundian barrels for 9 months prior to bottling. The wine was bottled in December 2003

Tasting Notes
76 cases of this wine were on Auction in 2004. It still shows a little charring on the aroma although the wood is now well integrated. The strong earthly forest floor character with a little dampness and pine needles is very prominent on the palate. The finish is well balanced with a soft creaminess and a firm woodiness underpinning the palate (mouthfeel).

Tasting Notes
From the very good 2005 vintage where fruitiness is the main feature of the year! Although still young, bright, fresh and fruit driven, this wine could evolve for year to come.

This is a classic “Bordeaux Blend” from Waterford Estate. The wine was blended before spending 19 months in a combination of new and 2nd fill French oak barrels. Bottling took place on 16 June 2006.

Tasting Notes
Black Cherry with black berry fruit, intertwined with hints of cassis and fine vanillas from the French oak barrels. The layered tannin structure is refined to give elegance to the long rewarding finish on the palate. This wine should reach its optimum maturity between 2009-2014.
