Sourced from the same two vineyard sites along the R320, Hemel-en-Aarde as the Ataraxia CWG Chardonnay 2006 which, at last year's CWG Auction, achieved the highest price for a case of white wine in the Auction's history. Painstaking, interventionist fruit selection was followed by a minimalist, non-interventionist winemaking approach. This wine was 100% fermented and matured in French oak barrels (42% of which were new) made by personally selected coopers located solely in the Burgundy region of France. Fortnightly battonage was employed throughout the 10 month maturation period, during which time only partial malolactic fermentation was allowed to take place before being prepared for bottling.

The grapes were picked at optimum ripeness and the wine made in open fermenters. The juice was on the skins for 4-5 days at 25º Celsius. Punching of the cap was done every 2 hours, and the skins and the juice were separated at 3-5º B. After malolactic fermentation in stainless steel tanks, the wine aged in 100% new French oak barrels for 18 months. The best barrels were then selected for this wine.
Tasting note:
A full bodied Cape Blend with a deep red colour. The black berry flavours are well balanced with the complex aromas from the new French oak. A wine with a spicy aftertaste that could last in the bottle for 10 years or more.

The Pinotage grapes were block selected before being picked at optimum ripeness. The wine was made in open fermenters. The juice was on the skins for 4 days at 25-27º Celsius. Punching of the cap was done every 2 hours, and the juice was separated at 3-5ºB. After malolactic fermentation in stainless steel tanks, the wine aged in 66% new French oak barrels for 18 months. The Pinotage was barrel selected especially for the CWG.
Tasting note:
A full bodied Pinotage with a deep red colour. The dark berry and plum flavours are well balanced with the complex aromas from the new French oak. A wine with a long finish that could last in the bottle for 10 years and more.

Skin contact for 8 hours. Just free run juice used. 75% cold fermented in stainless steel. 25% fermented in new French oak for 4 months before it was blended to show fresh Semillon fruit with creamy lees character. Bottled under screw cap.
Tasting note:
Distinctive cool-climate minerality, nettles, fig and dusty dry fynbos express Elim provenance. The small proportion fermented in new French oak has added complexity and length with smokey bacon aromas. Firm acidity for mouth watering freshness. Ideally suited to food, but good enough for solo enjoyment.

Alc 15,0 vol% RS 3,83 g/l TA 6,0 g/l pH 3,5 The name, Teen Die Hoog, was given by the workers on the farm - not because they see this cold, south-eastern facing red slate hill as the highest vines in the country but because they see it as their toughest pick of the season.
The grapes were picked with great phenolic ripeness at the beginning of April after a long ripening period. Cold maceration for 4 days was followed by pump overs every 6 hours. The wine went through malolactic fermentation in new French oak where it then matured for 15 months. Unfiltered, this is a selection of the 3 best barrels.
Tasting note:
Power with elegance. Modern and delicious. Intense Shiraz fruit. The low-yielding red slate vineyards result in lovely roasted coffee, ripe plum with dark chocolate and spicy fynbos flavours. Velvety texture with supple, well balanced tannins. Impressive length. Will develop superbly over the next 4 to 8 years.

The grapes were hand picked and destalked and after 6 hours of skin contact, the skins were pressed, inoculated and at 15º Brix, transferred to 225 litre oak barrels where fermentation was completed. Matured in oak for 120 days then racked, stabilised and bottled.

A wine that expresses a true cool region and the uniqueness of Durbanville soil, with well integrated flavours of lemongrass and citrus, supported by oak undertones.

Growing at 350 metres altitude and influenced by the breezes of the Atlantic Ocean, the flavours resonate in pine needle forest, roasted cherries and nuts.

One third each: Cabernet Franc, Merlot, Cabernet Sauvignon. This Auction wine is a selection of a single best barrel of each variety from our small 3 hectare Mont Fleur vineyard, 380 metres up between the Stellenbosch and Helderberg Mountains. The soil is a deep red Hutton with an ideal combination of good drainage and good moisture retention. The vines are planted to a relatively high density of 5000 vines / ha ensuring that each vine does not produce much more than 1kg. Matured for 23 months in new French oak and bottled without fining or filtration.
Tasting note:
The perfectly ripe fruit shows in the deep colour and intense, complex nose. A rich, powerful wine with a long fine tannin finish.

Tasting note:
Bright deep ruby. Bouquet: the complex aroma of this delicious wine is dominated by the red berry flavours and supported by some cedar, vanilla spice from the barrels. The cumin spice, almond and candy floss complement the aroma of the wine. Palate: the aroma of red berries and plum follows through onto the palate. Dark chocolate, mocha and fruit cake fruit flavours enchant the mid-palate, complemented by a spicy oak finish. The elegant tannin structure ensures a juicy mouthfeel.

The grapes were picked at phenolic ripeness, cool soaked for 3 days at 12º C and then inoculated with selected yeast strain. At the start of fermentation, the grapes were pressed in a traditional basket press direct into 6 new 'CATALYST' barrels for rest of alcoholic and malolactic fermentation. The wine underwent two rackings during maturation of 18 months in the barrel. 'CATALYST' is a reference to the origins of French Oak used in the make-up of the barrel.
Tasting note:
Great primary fruit character with plums and spice on the nose; with touches of mocha and tobacco on the palate. Nice integration between wood and fruit with a powerful complexity. Lingering, lasting creamy texture. Great for 2010.

This wine was selected from a small parcel of one of our two Riesling vineyards and is of a specific clone, WR239. At picking, about 30% of the grapes were 'ennobled' by botrytis. An Alsatian selected yeast was used to carry out the alcoholic fermentation in 3rd fill French barriques. The wine spent 11 months in barrel.
Tasting note:
Lime green/yellow in colour. On the bouquet, beautifully perfumed with a mélange of aromas; apricot, litchis and honeyed notes infused with lemon/tangerine. The palate entry is decadently creamy with evident glycerol adding weight and texture. The wine has a beautiful acid/sugar balance, with the acidity crisp and clean. All ends in a silky lingering finish.

Tasting note:
Medium-dark ruby colour with garnet edge; aromas and flavours of cherries, red berries and spice with subtle vanilla and cedar; smooth, velvety tannins with a lingering finish. The description in the 2001 auction catalogue suggested that this wine should be bottle matured until at least 2003, and that it should continue to improve for about five years thereafter i.e. 2008. Now more or less at its peak, and should stay there for another 4 or 5 years.

The grapes for this wine comes from a single south-west facing vineyard block high on the Helderberg mountain, where the fruit was picked very early in the morning to preserve flavours. The juice was treated reductively, keeping oxygen out and preserving the delicate flavours. Fermentation took place in stainless steel tanks at low temperatures and the wine was kept on the lees, with stirring for another three months to gain more complexity.
Tasting note:
This Sauvignon Blanc shows exceptional tropical melon, passion fruit, guava aromas and freshly picked garden herbs that follow through to a smooth and full palate. The palate is layered with sweet gooseberries, nettle and faintly mineral notes. This wine has the weight to stand up to flavourful dishes and has good ageing potential.

Crushing and pressing of this special selection of grapes from the Nine Yards Chardonnay vineyard took place immediately after de-stemming. The juice was barrel fermented in traditional 228 litre French oak barriques using natural yeast from the vineyard. Twelve months oak maturation and regular barrel rolling to accentuate the rich, leesy character has added complexity to this wine especially made for the CWG Auction.
Tasting note:
This reserve Chardonnay has intense, minerally, lemon/lime flavours with hints of butterscotch and vanilla. The full, rich mouthfeel and balanced toasty oak integrates well with the tropical fruit finish.

A blend of the best "Cobblers Hill" barrels and a reserve Cabernet Sauvignon, this wine has been named "Sophia" after the legendary mother of Faith, Hope and Charity. Representing the characteristics of the three Bordeaux varieties that make up this exceptional wine, the Cabernet Sauvignon, Cabernet Franc and Merlot grapes were harvested from the hillside vineyards at Jordan, with views overlooking Table Mountain and False Bay. Fermented at 28°C with three pump-overs daily over the fermenting cap. After pressing, the wine was racked to barrel where it completed malolactic fermentation. The wine spent a total of 26 months in 225 litre French oak barrels to accentuate the rich, leesy character that has added complexity to this wine specially made for the CWG Auction.
Tasting note: Complex, dark chocolate, black cherry and cassis intertwine with rich blackberry fruit and hints of vanilla and spice from the integrated French oak. Densely layered ripe tannins add to the opulent finish. Well-structured, this wine will reward careful cellaring for many years to come.

The three cultivars were vinified separately and the best tanks went to new French oak barrels for 24 months. Barrels from three different coopers were used. The best barrels were then selected for the blend.
Tasting note:
Very intense dark ruby with a brooding, black centre: massively structured with powerful tannins and serious oak treatment harmoniously woven into a tapestry of richly fruited layers. Superbly crafted with plush dark fruit and a tightly knit structure boding well for long life. A long focused finish, presently only hinting at the treasures to be revealed over the next 4-6 years and beyond.

The fruit is from a single hillside vineyard in the Bottelary area. Full ripe fruit was hand picked during the second week of March 2005 and fermented in stainless tanks for 10 days. After fermentation, the wine was aged in 300 litre French oak barrels for 21 months. This wine was selected from the best barrels and lightly filtered at bottling. 100 cases of this wine were sold at the 2007 CWG Auction.
Tasting note:
Dense, dark red colour. Fresh blackcurrant and ripe berry fruit on the nose. The palate is layered with ripe fruit and oak flavours and a soft tannin structure.

The grapes for this wine were harvested at our Elim farm in the chilly early mornings and transported to Stellenbosch in lug boxes. To preserve flavours and minimize oxidation, the still cool grapes were crushed immediately upon arrival. Neutral yeasts were used to ferment the juice at low temperatures (12-14°C) and the wine was aged on the lees for three months with occasional stirring to add complexity and weight to the palate.
Tasting note:
The wine was blended from Sauvignon Blanc, that lends fruit and a steely minerality to the wine, and 15% Semillon that in turn adds additional weight to the palate. This classic cool climate Sauvignon shows succulent, wild tropical fruit while flinty mineral tones follow on the palate. The palate shows incredible weight and length and this wine has the potential to age well with careful cellaring.

90% Shiraz, 10% Cabernet Sauvignon A barrel selection Shiraz which spent 18 months in 100% French oak, of which 50% was new. This barrel selection was blended with 10% cabernet Sauvignon to give the wine more structure, backbone and age-ability. The name comes from my son misunderstanding the name WILD BOAR and for some reason calling them WILD HOARS.
Tasting note:
Rich vibrant colour, dark fruit and chocolate with typical Shiraz spiciness balancing the palate. Firm ripe tannins which form a backbone on which this wine is built.

This wine was carefully selected from our best tank of the 2008 harvest. We allowed our grapes to ripen further than in the past to lend a riper, beautiful tropical fruit character and full mouthfeel to our typical Durbanville pyrazine grassiness. Made from only free run juice which is protected and cared for throughout in the very pedantic Nitida way.
Tasting note:
A wine that bursts with character from the nose to the palate. A riper than usual example of Nitida Sauvignon Blanc, it gains in tropical character but retains its definitive pyrazine personality. A first impression of flinty, mineral nettles, hinting of granadilla, followed by a mouth full of old fashioned, white, dessert peaches, juicy pear, kiwis and spanspek, with a lovely lingering capsicum finish.

The grapes were lightly crushed and the juice was allowed to settle overnight. New French barriques were filled and allowed to ferment with the natural yeast, using the indigenous microflora on the grapes. Fermentation took place in a 14°C cellar but actual fermentation temperatures were not monitored. Rudera Chenin Blanc Noble Late Harvest completed fermentation two months later and was sterile filtered before being bottled. 72 cases of this wine were sold at the 2006 CWG Auction.
Tasting note:
Distinct yellow hue; very rich honey bouquet. Amazingly full, scented nose with waxy, mouth-watering fruit salad and apples. Rich mouth-feel and layers of tropical flavours. The delicate yet firm smokey, oaky flavour expands in the mouth. Fairly sweet and full; lovely texture and good length.

This Shiraz (92%), Viognier (8%) blend is a collaboration between the Heyns family and Saronsberg. The grapes were handpicked, bunch sorted, destemmed and berry sorted on vibration tables. A portion of 12% was kept whole bunch. The mash was left in the fermenters for a 5 day cold soak. After fermentation and extended maceration the total time on the skins was 17 days. The wine was then pressed into 100% new 300 Litre French Allier oak barrels where it completed malolactic fermentation.
The Viognier was pressed whole bunch, settled and fermented in barrel separately from the Shiraz to preserve its delicate floral flavours. After 12 months the two portions were blended and left in barrel for a total of 18 months. A coarse sheet filter preceded bottling.

This single barrel selection from low yielding vineyards (30hl/ha) that grow on sparse shale soils epitomises Saronsberg’s passion for Shiraz.
The grapes were hand picked, bunch sorted, destemmed and berry sorted on vibration tables. The berries were gently crushed into a satellite tank and deposited in the fermenters for a cold soak of 4 days. During fermentation the skins were mainly punched down by hand with the total time on the skins being 15 days. The wine was then pressed into 100% new 300 Litre French Allier oak barrels where it completed malolactic fermentation. After a total of 18 months in barrel the wine was given a light egg white fining and filtered through a coarse sheet filter prior to bottling.
Tasting note:
The Shiraz shows an intense colour with dark fruit, fynbos and spicy flavours. The palate is full bodied with hints of violets and oak spice. The tannins are well structured with an elegant dry finish.

Picked on the riper side of 20º Balling and whole bunch pressed. Fermented in seasoned French oak. Four outstanding barrels were selected and after 16 months on primary lees it was blended with 10% of 2005 Chardonnay cuvée before bottling in June 2005. Degorged after 24 months on the lees with very low dosage.
Tasting note:
Delicate creamy mousse with roasted almond and buttered brioche flavours against a back drop of lemon cream complexity. The toasty French oak adds depth of flavour and a masculine firmness to the structure.

This wine is made from our best Sauvignon Blanc and Semillon vineyards. The grapes are harvested at 3am by machine. The Sauvignon Blanc is treated reductively and undergoes a long cold fermentation in stainless steel tanks. The Semillon is barrel fermented in new French oak and left on the lees for 4 weeks.
Tasting note:
Wild and herbaceous with incredible mineral notes. Full, vibrant palate with sweet citrus characters coming from the Semillon portion. This wine is a true reflection of cool climate terroir and will benefit from careful cellaring.

Bright gold, green tinge. Tropical, pineapple and citrus nose. Baked apples, grapefruit and quince create a rich palate with savoury complexity. A weighty wine with great balance of wood and fruit. Lovely long finish.

The separate varieties were whole berry fermented on their own for 4 - 8 days on the skins, with gentle pump overs three times a day. The blend was made up after malolactic fermentation before the wine went into barrel. Barrel ageing took place in new, 2nd and 3rd fill barrels to achieve a more subtle tannin integration.
Tasting note:
Dense aroma of black fruit with hints of mocca and truffles. Rich flavour profile with soft juicy tannins that are well integrated to give an elegant long finish.
