The most important winemaking decision happened many years before the first grape for this wine was ever harvested. It was a decision of what type of grape to plant where, and in what specific way. To this extent, this wine was conceived and dreamt about over 15 years ago. We chose specific clones of specific varieties, married them to specific rootstocks, planted them on carefully prepared soil, in particular sites on a unique farm. Many years later, this vision bore fruit and the simple, foreseen winemaking process took place. Manual punch-downs, wild yeast, unfiltered and unfined. Natural, hand-crafted wine.
