Alc 13,76 vol% RS 2,3 g/l TA 5,8 g/l pH 3,54 This wine is a 100% clone 115, fermented in open fermenters with the cap pushed back into the juice 4 to 5 times per day. Alcoholic and malolactic fermentation were completed in second fill Burgundian barrels for 15 months prior to bottling. 100 cases of this wine were sold at the 2007 CWG Auction.
