Flagstone Month of Sundays 2005

The Weisser Riesling (Swartberg, Oudshoorn) and Sauvignon Blanc (Elim) were handled very reductively. The Sauvignon Blanc had 12 hours of cold maceration before pressing. Both were tank fermented and kept on the lees to just before bottling. The Chardonnay (Helderberg) and Morio Muscat (Swartberg, Oudtshoorn) were cold soaked for 6 hours. They fermented in barrel for 3 months before blending and bottling. Tasting Note: Delicate pears, lemon meringue, linden blossom, terpenes and a slight noble character on the nose. Crisp, penetrating mouthfeel, delivered with a lingering finish.

Jordan Chardonnay Reserve 2004

Crushing and pressing of this special selection of grapes from the Nine Yards Chardonnay vineyard took place immediately after de-stemming. The juice was barrel fermented in traditional 228 litre French oak barriques using natural yeast from the vineyard. Fourteen months oak maturation and regular barrel rolling to accentuate the rich, leesy character has added complexity to this wine especially made for the CWG auction. Tasting Note: This reserve Chardonnay has intense, minerally, lemon/lime flavours with hints of butterscotch and vanilla. The full, rich mouthfeel and balanced toasty oak integrates well with the tropical fruit finish.

The wine spent a total of 26 months in 225 litre French oak barrels. Kaapzicht Auction Reserve 2003

Three cultivars made separately and matured separately in new French oak barrels from three different coopers for 20 months before being blended and bottled on the Estate. Tasting Note: ‘Exuberance’ is the word here: from the deep-ruby hues that dominate this mulberry-coloured blend, through to the nose and palate that display, each in its own way, the hallmarks of a great wine. The nose is cedar and sweet vanilla, followed by a rush of ripe, dark berry-fruit in profusion. The palate shows balance and harmony within its very elegant structure. A beautifully proportioned wine; tightly and neatly packed to provide great drinking pleasure.

Kaapzicht Cabernet Sauvignon Reserve 2002

Made in stainless steel fermenters with continuous pumpovers during peak fermentation. Two sets of new barrels were used for wood maturation, with the first set used for 18 months, with one racking after 9 months. The wine was then matured in the second set of barrels for 15 months. Tasting Note: Brilliant mid to deep ruby, the rim paling and showing a garnet tinge. A Cabernet that shows all the textbook ripe berry qualities: blackberry, bramble fruit characters fleshed out with mulberry, this wine shows elegant restraint with tapered mineral tones. The oak is scented rather than sweet, showing cedar and sandalwood, and although still immature, aromas suggest pencil lead and tobacco leaf. The palate is packed with cassis fruit, mineral flintiness and top-quality wood.

The grapes were selected from two vineyard sites – Bottelary and Helderberg – in Stellenbosch. Cooler fermentation than normal in order to preserve fruit, with four weeks on skins after fermentation. 100% New French oak for 12 months, no fining or filtration. Tasting Note: Expressive nose of plum pudding, chocolate, dark toffee and savoury undertones. Cherry compote, chocolate sauce and cinnamon flavours – the mix of these backed with toasty wood tannins. Rudera Cabernet Sauvignon Auction Reserve 2003

Sorting was done in the vineyard during hand picking. The grapes were fermented with inoculated yeast (WE372) and punched down three times a day. Fermentation was at 31 degrees C and lasted five days. Extended skin contact lasted a total of 12 days. The wine was racked using gravitation only. This was done for the first time after malolactic fermentation, and again three months later. The wine was matured in new French oak (Vicard Prestige) barriques for 23 months and is unfiltered, receiving only an egg white fining before being bottled. Tasting Note: An almost opaque wine with a deep ruby rim, and intensity of colour. A nose of great depth, with elegant violet, lead pencil and cedary cigar box flavours infused with cassis. Impressive, big, ripe, velvety tannins supply the structure and backbone of this wine. The finish is long and persistent, culminating in a truly classic Cabernet.

Villiera Handmade Merlot

Fully ripe Merlot was destalked by hand and hand-sorted before partial hand crushing into open 225 litre barrels for fermentation. Regular hand punching ensured good texture and colour. After a gentle pressing, the young wine returned to the barrels for malolactic fermentation after refitting the heads for malolactic fermentation. The wine was matured for a total of 19 months in new French oak and bottled unfiltered. Tasting Note: The wine displays an attractive dark red colour with intense mulberry and choc-mint aromas. The new oak makes a subtle contribution with hints of vanilla and spice on the palate. The wine is well balanced with soft tannins and a rich, long finish, structured for extended maturation.

The distinctive Groenekloof terroir of deep fertile soils and proximity to the Atlantic Ocean is reflected in the enhanced varietal character of this slow ripening fruit from the Cape West Coast. In keeping with Omnia Wines – commitment to partnerships with their producers and nature, these Sauvignon Blanc grapes were selected from a single vineyard of the Tullie family. 84 cases of this wine were sold at the 2004 Auction. Tasting Note: This expressive Sauvignon Blanc shows its cool origins in ripe gooseberry and flinty flavours with a crisp and long finish.

Vriesenhof Pinot Noir 2003

Punching down the cap during vinification has resulted in a firm wine with high extract, without losing the fragile components of the variety. Made from Pinot Noir clone 777 on Malmesbury shale soil from the top of the hill at Vriesenhof. Long skin contact and completion of alcoholic and malolactic fermentation in new wood to support the Pinot fruit, gave birth to this wine. Tasting Note: Made solely from Pinot Noir clone 777, this wine shows the typical fragile red berry fruitiness (raspberry) on the aroma with a lively, long aftertaste which will improve in time.
