Boplaas Potstill Brandy 1996
100% Colombar, taken through double distillation and matured for 10 years in French limousin barrels. Tasting Note: Rich, golden colour. Lovely dried peach and vanilla flavours with a long, lingering finish. A brandy that my great grandfather, who exported brandy to London in 1880 would have been proud of.

Boschkloof Auction Reserve 2004
The grapes were harvested at 25 – 25,5 degrees balling. The Cabernet Sauvignon vineyard is 30 years old with a natural yield of 4 tons/ha. The grapes were destemmed and fermented in pump-over tanks. The Merlot was cold soaked for 3 days before fermentation started and the Shiraz was fermented naturally to produce more mid-palate flavours. The wine was fermented at 24 – 26 degrees C. The Cabernet Franc was harvested very ripe at 26.5 degrees balling to get those ripe soft tannins. All the wines were left on skins after alcoholic fermentation for 19 – 20 days. No press juice was used. The wine underwent malolactic fermentation in new barrels and was left on the lees for 5 months. The wine was matured in new French oak barrels for 24 months. Tasting Note: Deep in colour with an intense bouquet of cedar, tobacco and black berry fruit. Richly concentrated with a touch of dark chocolate, spices and nuts. Great mid-palate and powerful finish. Tremendous length with soft, ripe, silky tannins. Just stays in your mouth.

Boschkloof Auction Reserve Shiraz – Viognier 2004
The Shiraz grapes were harvested at optimum ripeness. Yield was 7 tons/ha. 20% of the juice was taken out by bleeding and then cold soaked for 3 – 4 days. The wine fermented at 25 degrees C. During fermentation the wine was delustaged once a day and pumped over three times a day. Left on skins for 21 days after alcoholic fermentation. Malolactic fermentation took place in barrel and the wine was left on the lees in barrels for 6 months. Matured in 225 litre French oak barrels (50% new) for 19 months. The Viognier was harvested separately. Fermented naturally in 255 litre French oak barrels. Malolactic fermentation took place in barrel and left on the lees in barrel for 6 months. The lees were stirred regularly and blending was done prior to bottling. Tasting Note: This highly concentrated Rhone style wine is a blend of 95% Shiraz and 5% Viognier. The Viognier adds complexity without being overpowering. Lots of beautiful violets on the nose and oriental spices and white pepper on the palate. Long finish and big creamy, juicy mid palate. Soft ripe tannins and great aging potential.

Handpicked from ocean facing vineyards, 5 hours skin contact and then pressed. 60% tank fermented, 40% barrel fermented. De Trafford Perspective 2004
The grapes are from our carefully manicured Mont Fleur vineyard 400m above sea level, between the Helderberg and Stellenbosch mountains. Planted in 1994 with narrow 2 m rows and a high planting density of 5000 vines per hectare. Open top fermentation in a small tank, 2 days pre-fermentation soak, fermentation with indigenous yeasts and four days post fermentation maceration. Total 14 days on skins. Maximum temperature 29 degrees C for the Cabernet Franc and 31 degrees C for the Merlot. Drained into new French oak barrels for malolactic fermentation and 20 months maturation before bottling unfiltered. No fining. Tasting Note: Complex cranberry, smoke, dust and a touch of earth on nose. Fine, firm, grippy tannins with integrated fruit lingering on the palate at the end of a long, dry finish.

Engelbrecht Els CWG 2004
The concept is to produce a wine made up of three different varieties that reflect the unique diversity of the Stellenbosch terroir. The different cultivars each lend their individuality to the blend – Cabernet Sauvignon gives structure and aging potential; Shiraz adds spice and palate weight and Merlot allows for integration. Tasting Note: Appearance: bright deep ruby. Bouquet: the complex aroma of this delicious wine is dominated by the red berry flavours and supported by some cedar, vanilla spice from the barrels. The cumin spice, almond and candy floss complement the aroma of the wine. Palate: the aroma of red berries and plum follows through onto the palate. Dark chocolate, mocha and fruit cake fruit flavours enchant the mid-palate, complemented by a spicy oak finish. The elegant tannin structure ensures a juicy mouth feel.

Flagstone Love Handles 2004
The grapes were hand picked on 25 March 2004 at 25.2-26.1 degrees balling. The grapes were then crushed, after which all small parts of the stems were removed by hand on a sorting table. Cold maceration on the skins took place for 10 days with one cold soak punch down per day. Fermentation took place in stainless steel open top fermenters with punch downs every four hours, at 25-30 degrees C. Pressing and barreling down took place without the use of pumps – only gravity flow. The wine was then matured for 24 months – two-thirds in new American oak barrels and the rest in older French and American oak. Tasting Note: The wine has a deep colour and a rich, complex nose that combines black fruit, licorice and cracked black pepper with hints of ethereal spice. Full and deep on the palate with a wonderfully integrated tannin structure and earthy undertones.

Flagstone Weather Girl 2006
The Sauvignon Blanc and Semillon both originate from the Moddervlei farm in the Elim area. The grapes were hand picked during February and March at optimal ripeness. Lots were either whole bunch pressed or crushed and left to cold soak for 12-24 hours. The cultivars were fermented separately in stainless steel tanks, using a variety of different yeasts. Post fermentation lees contact took place in tank after which the wines were racked off the lees and blended. Tasting Note: A very characterful, complex wine with strong green fig, capsicum and litchi aromas. The wine has a substantial palate that is well balanced with a long supple finish.

Glen Carlou Chardonnay Reserve 2005
These grapes are from a single vineyard, first used for our CWG Reserve in 2004. Barrel fermented and matured in 100% new 225 litre French oak. Natural yeast fermentation and spontaneous malolactic allowed for complexity. 18 months ageing sur lie. Bottled with minimal filtration. Tasting Note: A rich, opulent wine. Graham Beck Shiraz Barrel Profile 2004
The Shiraz grapes were picked at optimum ripeness and cool soaked for two full days prior to fermentation. During fermentation at 6 degrees balling, the Shiraz was pressed and completed the alcoholic fermentation and the malolactic fermentation in barrel. Over the last few vintages, I have worked together with a cooperage on barrel profiling for wine styles, allowing us to create perfect harmony between the wood aromas and still respecting the fruit. This Shiraz selection of 3 barrels, is a great example of achieving the right balance and finesse which delivers this unique Shiraz. Tasting Note: Attractive colour. Rich and layered flavours with plums and spicy tones on the nose. Hints of a roasty, toasty character, from the wood on the start of the palate, which changes into beautiful fruit and spice. Good mouthfeel with integrated tannin and wood flavours. Very good complex and lingering finish. Potential for maturation until 2010.

Grangehurst Cabernet Sauvignon Reserve 2000
A Selection of 5 barrels of Cabernet Sauvignon from two prime Helderberg vineyards. Fermented in open kuipe and barrel matured separately for 21 months; then blended and transferred back to the same barrels for another two months. Total of 23 months in barrels – 80% French (Nevers & Troncais), 20% American oak. 120 cases of this wine were sold at the 2002 Auction. Tasting note: Dark ruby colour with slight garnet edge. Violets, red berry and cedar aromas. This full-bodied wine has a creamy palate with berry, mocha and oak flavours; the tannins have mellowed after 4 years bottle maturation since the 2002 Auction, but the structure and fruit/wood balance should enable this wine to maintain or further enhance its quality for at least another 5 or 6 years.

Grangehurst Cape Reserve Blend 2003
A Cape Blend produced from Pinotage, Cabernet Sauvignon and Shiraz grapes that were sourced from prime Helderberg vineyards. Fermented in open kuipe with regular punch downs for colour, tannin and flavour extraction. The individual wines were matured separately for 20 months in 4 French oak barrels and 1 American oak barrel; these components were then blended and matured for another 6 months in new French (Allier) oak barrels – a total of 26 months in oak (87% French, 13% American). Tasting note: Dark ruby colour with a slight garnet edge; sweetish red berry, plum and mocha aromas and flavours; ripe, mellow tannins and a lively acidity contribute to the structure of this wine, which has a silky mouthfeel and a lingering finish. Recommended drinking 2006 – 2010.

Jordan Chardonnay Reserve 2005
Crushing and pressing of this special selection of grapes from the Nine Yards Chardonnay vineyard took place immediately after destemming. The juice was barrel fermented in traditional 228 litre French oak barriques using natural yeast from the vineyard. Fourteen months oak maturation and regular barrel rolling to accentuate the rich, leesy character has added complexity to this wine specially made for the CWG Auction. Tasting Note: This reserve Chardonnay has intense, minerally, lemon and lime flavours with hints of butterscotch and vanilla. The full, rich mouthfeel and balanced toasty oak integrates well with the tropical fruit finish.

Kaapzicht Cabernet Sauvignon Auction Reserve 2003
Made from a single vineyard situated on the highest point of the farm. Oak matured for 22 months. Tasting Note: Dense, plum-coloured Cabernet with a youthful pink rim. The nose shows subtle berries with prominent red cherry fruit, touches of Cabernet grassiness, and a hint of fragrant violet. The oak is very much a supporting act to centre-stage fruit. The palate is in complete harmony with softly-rounded dark-berry fruit, fleshy and full in body. Well-integrated oak has lent some attractive cigar box touches and helped tannins to softness and approachability.

Made using normal winemaking practises but with cooler fermentation temperatures to retain as much fruit as possible. Extra post fermentation time on skins allowed for maximum fine tannin uptake. Nitida CWG Selection Sauvignon Blanc 2006
The start of the growing season in Durbanville was much colder than usual, causing most bud burst occurred late. It remained cool throughout the growing period and together with the dryness of the season, this ensured well balanced canopies. As is our strategy, we picked our grapes from a number of different vineyards and vinified each separately. This year we have made our wine for the Auction from grapes off an East facing vineyard showed particular intensity and terroir character. Careful blending with a small amount of Semillon completed the picture. Tasting Note: This wine shows the intense personality of Sauvignon blanc grapes grown in cooler regions. It lives up to expectations with an instant impression of freshness, with white peach flesh and mushy peas, yielding quickly to a full bodied mid-palate featuring gooseberries, granadilla, honeysuckle, and ripe pear with intense New Zealand style pyrazine character. The finish is cool climate green peppers and freshly mown lawn. Firm, steely acids make this Sauvignon blanc a wonderful option with anything from a winter korma curry to fresh barbequed tuna on the beach.

Nitida CWG Selection Shiraz 2004
The grapes for this wine come from a single vineyard on a North facing slope in the Durbanville hills. Durbanville’s cooler terroir imparts spicy, pepper, Rhone-style characters to its Shiraz fruit, characters which we intentionally protect and emphasise throughout our winemaking process. We hand pre-sort, so that only the ripe fruit is captured. We use only open fermenters, punching the cap through every 4 hours and fermenting at 28 degrees centigrade. With our beautiful fruit quality and soft tannin complexity, there is no need to use heavy new wood or American oak. The wine was matured in second fill French oak for 12 months and the wine picked for the CWG Auction was a selection of the best 2 barrels. Tasting Note: A rare example of pure Rhone-style Syrah, using hand picked and sorted grapes from a single vineyard nurtured in Nitida’s intimate cellar. An extremely masculine wine showing pepper and spice complexity around elegant cranberry fruit.

Sorting was done in the vineyard during hand picking. The grapes were fermented with WE372 yeast and punched down three times a day. Fermentation was at 31 degrees C and lasted less than five days. Extended skin contact lasted twelve days. After fermentation, the wine was pressed and put in new Vicard Prestige barrels. The wine was racked twice using gravitation only. The wine was bottled unfiltered after a maturation period of 23 months in new French oak. Tasting Note: An opaque wine with a vivid, purple rim. Classic lead pencil, cigar box and cassis flavours on the nose. Allow a few minutes in the glass; very attractive bouquet of violets, chewy black fruit and herbal whiffs. The tannins on this wine are big and ripe and will benefit from decanting. Rich plummy cassis fruit on palate and long finish.

Simonsig Shiraz Auction Reserve 2004
A ten year old vineyard planted on a poor sandy loam soil consistently produces a highly perfumed Shiraz. Very ripe Shiraz was handpicked on 23 March 2004 and given 3 days cold soak before yeast inoculation. Fermentation temperature peaked at 28? C and total maceration on skins lasted 15 days which allowed for maximum extraction of fruit. Malolactic fermentation finished in new oak and after 17 months, the two best barrels were bottled. One barrel was French Vicard Allier medium toast oak and the second was Seguin Moreau American M+ white oak. Tasting note: Fragrant, spicy nose with cinnamon, cloves and vanilla pod. Ripe berry and chocolate flavours with a touch of white pepper. Silky smooth texture and elegant soft tannin structure. Further aging will see perfumed fruit emerge and oakiness subside.

Villiera Blanc De Blanc Brut Chardonnay 2003
Slightly unripe, healthy fruit was whole bunch pressed in a pneumatic bag press. Only the Cuvee (500 litres/ton) was settled and naturally fermented. After stabilisation and addition of the liqueur de tirage, the wine was bottled for second fermentation. After 30 months on the lees, this sparkling wine was riddled and disgorged. Dosage ensured perfect balance and a further 2 years on the cork will result in peak maturity. Tasting Note: Rich, creamy, yeasty nose with a full, ripe toasty flavour on the palate, developing finesse and complexity on the aftertaste. Powerful and bracing to drink now but could develop more intensity with another 2 years in the bottle.

Vriesenhof Pinot Noir 2003
Punching down the cap during vinification has resulted in a firm wine with high extract, without losing the fragile components of the variety. Made from Pinot Noir clone 777 on Malmesbury shale soil from the top of the hill at Vriesenhof. Long skin contact and completion of alcoholic and malolactic fermentation in new wood to support the Pinot fruit, gave birth to this wine. 76 cases of this wine were sold at the 2005 Auction. Tasting Note: Made solely from Pinot Noir clone 777, this wine shows the typical fragile red berry fruitiness (raspberry) on the aroma with a lively, long aftertaste which will improve in time.

Warwick Estate Auction Reserve 2004
A blend of grapes from our best vineyards were fermented separately in bins, punched down by hand and aged separately from the mainstream blending components in tight grain barrels. Tasting Note: Intense deep red colour. Redcurrant and blackberry components intermingle with chocolate, mocha and nutty flavours on the nose. The wine shows great depth in tannin structure, complexity and amazing length.
