The grapes were co-fermented together naturally. Traditional extraction methods were used during the fermentation, followed by a long extended maceration on the skins. The wine was matured in a cask for 36 months before being bottled without filtration. Tasting note: Full bodied, complex, with excellent age-ability.

AA Badenhorst Family Wines Kalmoesfontein Noble Late Harvest Volume 2 2008

Botrytised grapes were harvested from unirrigated Semillon vines and pressed into a wooden cask for fermentation. The fermentation was very lengthy and took 18 months to stop naturally. The sugar content was extremely high and the yeasts only managed to ferment out at 8.68 vol%. The wine spent 24 months in cask before being filtered and bottled in 375ml and 750ml bottles. Tasting note: This wine has wonderful golden hues; aromas typical of noble late harvest – marmalade, dried peaches, apricots and ginger. The palate is generous in flavour and texture with a long, mouth coating finish.

AA Badenhorst Family Wines Kalmoesfontein Semillon Noble Late Harvest Volume 2 2008

Botrytised grapes were harvested from unirrigated Semillon vines and pressed into a wooden cask for fermentation. The fermentation was very lengthy and took 18 months to stop naturally. The sugar content was extremely high and the yeasts only managed to ferment out at 8.68 vol%. The wine spent 24 months in cask before being filtered and bottled in 375ml and 750ml bottles. Tasting note: This wine has wonderful golden hues; aromas typical of noble late harvest – marmalade, dried peaches, apricots and ginger. The palate is generous in flavour and texture with a long, mouth coating finish.

Boplaas Auction Reserve Port 2008

This auction reserve Port was made from low yielding (5t/ha) Touriga Nacional, Tinta Barocca and Souzao grapes. Hand selected full ripe bunches were picked, destemmed and punched down continuously for maximum colour and flavour extraction. Fortified at 11 degrees Balling and matured in old oak barrels for 1 year. Tasting note: Intense black colour, complex integrated flavours of violets, chocolate, black berry, dried fruit and fynbos. Soft ripe tannins, alcohol integrated with a lingering aftertaste.

Boschkloof Auction Reserve Shiraz 2007

The grapes were harvested at optimum ripeness and destemmed and fermented in open 500 Litre barrels. The wine underwent natural fermentation with no temperature control and nothing was added to the wine. Tasting note: Lots of lovely ripe berry fruit with nice hints of chocolate and toffee and some white pepper and smoked ham on the aftertaste. This is a big wine with a very long finish.

Boschkloof CWG Conclusion 2006

The different varieties were harvested separately. The Cabernet Franc was harvested at optimum ripeness, resulting in soft tannins; and the Merlot was cold soaked for 2 days before fermentation. The wines were left on the skins for between 25 and 28 days. No press juice was used. The wine was matured for 27 months in new French oak. Tasting note: Deep in colour with some tobacco, flinty and minerally flavours. Good mid-palate with a long finish

Bouchard Finlayson Unfiltered Pinot Noir 2007

In the winemaking, 10% of the grapes were supplied as whole bunch and 50% as whole berry. The grapes underwent cold maceration for 4-5 days and post fermentation maceration of ten days. Lightly pressed and barrel matured for 16 months. The wine was then bottled as unfiltered – after thorough microbiological examination. 50 cases were sold at the 2009 CWG Auction. Tasting note: Engaging aroma of cherries, with long, velvety black fruit and mouth-filling palate.

Cape Point Vineyards Auction Reserve White 2008

Traditional handling in the cellar. Barrel fermented and aged for 11 months in 600 Litre French oak barrels where the wine underwent full malolactic fermentation. The wine received a light filtration before bottling. Drink now or over the next three years. Tasting note: The blend displays honey, oatmeal and citrus which follow onto a rich palate with good length and freshness.

Cederber Private Cellar Semillon 2010

The grapes underwent skin contact for 12 hours and only free run juice was used. 70% of the wine was cold fermented in stainless steel. 30% was fermented in French oak for 4 months before the wines were blended to show fresh fruit with creamy lees character. Tasting note: Distinctive cool-climate minerality with nettles and green fig, expressive of Elim provenance. The small proportion fermented in French oak has added complexity and length with smoky bacon aromas. Firm acidity for mouth-watering freshness. Ideally suited to food and fresh enough for solo enjoyment.

Cederberg teen die Hoog Shiraz 2008

The name ?Teen Die Hoog? was given by the workers on the farm – not because they see this cold south-easterly facing red slate hill as the highest vineyard in the country, but because they see it as their toughest pick of the season. The grapes were picked with great phenolic ripeness at the end of March after a long ripening period. The wine went through malolactic fermentation in new French oak barrels where it matured for 15 months. This wine came from a three barrel selection. Tasting note: Power with elegance. Modern and delicious. Intense Shiraz fruit. Low-yielding red slate vineyards result in lovely roasted coffee beans, intense dark chocolate and spicy fynbos flavours. Velvety texture with supple, well balanced tannins. Impressive length. Will develop superbly over the next 5 to 8 years. Tasting note: The first impression the wine gives is the expressive citrus characters on the nose. The palate is bursting with flavour, starting with lime notes carrying through to a concentrated mid palate, with a very long lingering mineral aftertaste.

De Grendel Amandelboord Sauvignon blanc 2010

The grapes were hand-picked from a selected area in a vineyard block. After being destalked, the fruit received 18 hours skin contact followed by a 3 day settling period. The wine was blended with a dash of Semillon, underwent cold fermentation and a stirring of lees, after which it was stabilized and bottled. Tasting note: Cool growing conditions ensure asparagus and gooseberry flavours on the nose. The balance of crisp acidity and layers of fruit enhances complexity on the palate.

De Grendel op die Berg Pinot Noir 2009

From the highest vineyard on our farm at 350 metres above sea level, the fruit is destalked into a 7 ton wood cask where it underwent four days of cold maceration and inoculation. The skins were gently punched down, basket-pressed and put straight into new French oak barrels for malolactic fermentation. The wine was then transferred into 3rd fill barrels for 13 months of maturation. Tasting note: Bright red colour. On the nose there are flavours of pine needles, earthiness & minerality. This is balanced by firm, natural acidity, and the older oak maturation ensures soft tannins with elegance and promising long ageing potential.

Edgebaston Cabernet Sauvignon Auction Reserve 2008

Fermented in 1,5 ton open tanks and punched down by hand every 4 hours. 14 days on the skins. Matured for 20 months in 2 new 300 Litre French oak barrels. Tasting note: This is a selection of the very best grapes and subsequent barrels from our GS vineyard. Intense cassis and black fruit flavours dominate the nose. Not a shy wine, the palate explodes with flavours layered in a complex weave of fruit and oak flavours backed by intensely structured but fine tannins. A rich wine that will partner rich meat dishes very well.

Ernie Els CWG 2008

The different clones of Cabernet Sauvignon, Shiraz and Merlot, were vinified seperately in open stainless steel fermenters. The combination of punch down and pump overs ensure maximum extraction of grape flavour and tannins. The wine was matured for 18 months in 300 liter oak barrels. 60% of the barrels were new, 40% second and third fill barrels. Tasting note: Appearance: Crimson red with a bright rim. Aroma: The wine has prominent Cabernet Sauvignon characteristics of sandalwood, leather and tobacco aromas. These are supported by hints of spice from the Shiraz and a strong blackberry core. Full, juicy red fruits and floral aromas complete the bouquet. The Ernie Els CWG 2008 has a medium palate weight with tight tannins that will integrate over the next few years, with a rich mineral finish. Impression: ?An accessible wine with a rich oak component that will benefit from further maturation, reaching its peak after 10 – 15 years?

Flagstone

Mostly Sauvignon Blanc and Semillon with a touch of Viognier, the grapes all originate in the cold climates of Elim and Elgin. All wines were barrel fermented and then aged in barrel for 10 months. This wine has been designed to live for at least 10 years from bottling. Tasting note: Intense green fig, green pepper, passion fruit and spice on the nose. Very concentrated, structured wine on palate showing citrus, vygie, green pepper, orange and cinnamon/vanilla toasty oak.

Grangehurst Cabernet Sauvignon Reserve 2005

A blend of Cabernet Sauvignon from two Stellenbosch vineyards with a splash of Petit Verdot. Fermented in open tanks, basket pressed and matured in 225 Litre French oak barrels for 28 months. 90 cases of this wine were sold on the 2009 Auction. Tasting note: Dark ruby with a slight garnet edge. Aromas and flavours of violets, red berries and cassis with some mocha and cedar. Lively on the palate with robust, ripe tannins that will enable this wine to develop and improve for at least 8 years from vintage.

Hidden Valley Top Secret 2008

The Shiraz was picked very ripe and allowed to ferment on the skins for a week, pressed, and then transferred to French oak barrels. After 24 months of ageing the wine was blended with other ?top secret? Rhone varietals. Tasting note: Lovely spice and pepper mingle with earthy notes and sweet red fruit on the nose. The tannins are soft and chewy, and linger on the after taste.

Jordan Chardonnay Auction Reserve 2009

Specially selected for the CWG Auction, this reserve Chardonnay is traditionally made using natural, wild yeast from the acclaimed Nine Yards Chardonnay vineyard. Intensely concentrated lemon-lime flavours and slow fermentation in 228 Litre Burgundian oak barrels for twelve months has resulted in a classic style with a new world twist. Quartzite veins through the 600 million year old granite sub-strata provide the backbone for the minerally flavours. Regular barrel rolling accentuates the rich, leesy character in this elegantly expressive wine. Tasting note: An iconic Chardonnay with intense, minerally, lemon-lime flavours and hints of butterscotch and vanilla. The full, rich mouth-feel and balanced oak integrates superbly with the tropical fruit finish.

Kaapzicht Cabernet Sauvignon / Merlot Auction Reserve 2007

The cultivars were vinified separately in red wine fermentors. Pump overs were done 3 times a day. The cultivars were matured separately in French oak for 24 months before being blended together. Tasting note: Dense, plum coloured with a brick red rim. The nose shows subtle berries with prominent red cherry fruit and a hint of fragrant violet. The palate is in complete harmony with softly-rounded dark berry fruit, fleshy and full in body. Well integrated oak has lent some attractive cigar box touches to the wine and helped the tannins to softness and approachability.

Kanonkop CWG Paul Sauer 2007

30 year old trellised vineyards with 5 tons/ha yields are used to produce this wine. The grapes were destemmed and sorted before fermentation, which took place in open top “kuipe” for 5 days. After malolactic fermentation, the blend was made and put in 100% new French oak barrels for 24 months. This is a selection of the best barrels of this wine. Tasting note: Wild and herbaceous with piercing mineral notes. Full vibrant palate, hints of passion fruit and tangerine elegantly balanced by subtle smokiness. This wine is a true reflection of cool terroir and will age wonderfully with careful cellaring.

Kanonkop CWG Pinotage 2008

20 to 50 year old bush-vines with yields of 3-5 tons/ha were used to make this wine. The grapes were destemmed, sorted, crushed and then fermented in open top “”kuipe” for 4 days. The wine underwent malolactic fermentation in barrel, followed by a further 14 months of ageing in 100% new oak barrels. Tasting note: Deep red colour with a strawberry and plum aroma and a touch of vanilla. Dark fruit on the palate with plum and blackcurrant being the focus, and mocha flavours adding to the complexity. The wine finishes with a dry aftertaste.

Exquisite parcels of Jonkershoek Valley fruit were separately vinified in open top fermentors. Towards end of fermentation, the wine was racked into new oak where it completed fermentation. After malolactic fermentation, individual components were classified and selected for inclusion into the 2007 Auction Reserve blend. 16 Months barrel maturation followed. Tasting note: Concentrated deep red colour. An already complex bouquet combines clean and rich blackcurrant, blackberry and a touch of vanillin oak. The amalgam of fruit flavours including plum, mulberry, redcurrant and blueberry is backed with just the right amount of clean oak. Long and persistent. Finely poised wine expressing the characteristics of the Jonkershoek Valley.

Nitida Cellars Aureus 2009

Aureus is the culmination of years of working with Sauvignon Blanc and Semillon. First we ear-marked blocks for particular cultivar personality. These grapes were kept separate in the cellar and then subjected to another round of stringent selection post fermentation (in tank for Sauvignon Blanc and new French oak for Semillon). Finally this unique blend of 56% Sauvignon Blanc and 44% Semillon was put back into a 3rd fill 300 litre French barrel for a further 6 months, which we find completes and complements the wine’s integration. Tasting note: A beautifully balanced Bordeaux-style white blend which shows a magic integration of warm creamy honey and nut crunch with cool, crisp green apples. Impressions of dawn jasmine and quince evolve into seductive honeysuckle and loquat, tempting you into indulgence. Begs to be enjoyed with confit of duck or even a guinea fowl pot-roast. Could be habit forming with just about any food, however.

Grapes were hand-picked at night. 100% barrel fermented and matured for 12 months in 50% new and 50% 2nd fill French oak. 20% of this wine was fermented with wild yeast. No malolactic fermentation took place. Tasting note: Goldish colour. Complex yellow fruit nose with hints of quince and pine nut. These aromas are well supported by a nutty presence which originates from the use of quality oak. This wine has a full bodied palate with a lasting aftertaste.

Rijk’s Private Cellar Auction Reserve Semillon / Sauvignon blanc 2009

Grapes were picked by hand in the cool of the night. The Semillon was fermented in new 300 Litre French oak barrels and matured for 12 months on the lees before being blended with the Sauvignon Blanc that was 50% tank fermented and 50% barrel fermented. Soft filtration prior to bottling. Tasting note: Straw coloured with a green tint. Intense white asparagus and grassy nose – typical aromas for a cool vintage. Full bodied, juicy mouth-feel is finished off with a balanced acid to keep the palate fresh and zesty.

Saronsberg Die Erf Shiraz 2007

This wine, made from handpicked grapes from low-yielding vineyards (28hl/ha) growing on sparse shale soils, epitomises Saronsberg’s passion for Shiraz. The grapes were bunch sorted, destemmed and berry sorted on vibration tables. Seventy percent of the berries were gently crushed into satellite tanks and deposited in the fermentors for a four-day cold soak. During fermentation the skins were mainly punched down by hand, with the total time on skins being 19 days. The wine was then pressed into 100% new French Allier barrels where it completed malolactic fermentation. After a total of 18 months in barrel the wine was racked and given a coarse sheet filtration prior to bottling. Tasting note: This Shiraz shows an intense colour with dark fruit, fynbos and spicy flavours. The palate is full bodied with floral notes and oak spice. The tannins are well structured with a long finish.

Simonsig Auction Reserve Shiraz 2008

These grapes come from a twelve year old vineyard grown on a deep red soil, yielding 8.5 tons/ hectare. Picked on 10 March at an optimal sugar level of 26 degrees Balling. Three days of cold soak were followed by another 28 days on skins, achieving perfect extraction of fruit and tannins. Oak maturation in a single new Francois Fr?res Nevers oak barrel lasted 25 months, with the oak tannins perfectly supporting the fruit. 70 cases of this wine were sold on the 2008 Auction. Tasting note: Delicate creamy mousse with roasted almond and buttered brioche flavours against a backdrop of lemon cream complexity. The toasty French oak adds depth of flavour and a masculine firmness to the structure.

Simonsig Cuvee Chene Cap Classique 2004

Picked on the riper side of 20 degrees Balling and whole bunch pressed. Fermented in seasoned French oak. Four outstanding barrels were selected and after 16 months on primary lees the wine was blended with 10% Chardonnay Cuvee 2005 before bottling in June 2005. Degorged after 39 months on the lees with very low dosage.

Spier Merlot 2008

The grapes were picked from a vineyard planted on a north-westerly slope at 120 metres above sea level. The grapes were harvested at full ripeness. Picked in 10 kg lug boxes, the grapes were pre-cooled to 8 degrees Celsius prior to hand sorting of the bunches followed by destemming, berry sorting and then crushing. Fermentation took place in open top French oak fermenters and Malolactic fermentation took place in barrel, followed by 22 months barrel maturation before bottling. Tasting note: The wine shows aromas of cherry, berries and smoky spice with an undertone of savoury earthiness and subtle mint chocolate. The wine is rich and complex with a dense but silky mid palate and a long, lingering finish.

Steenberg Vineyards The Magus 2009

This wine is made from the best possible Sauvignon Blanc and Semillon that I could source. Both varieties were cold fermented in older French oak in order to capture maximum fruit. The wines were left on the lees for 8 weeks to enhance mouth-feel and then blended, stabilised and bottled. Tasting note: Wild and herbaceous with piercing mineral notes. Full vibrant palate, hints of passion fruit and tangerine elegantly balanced by subtle smokiness. This wine is a true reflection of cool terroir and will age wonderfully with careful cellaring.

Teddy Hall Mediterranean White 2008

This wine started natural fermentation on the skins and on the second day it was transferred to French oak barriques. The barriques were topped up two months later, and then tightly sealed until just a few days before bottling when I tasted through the barrels to make my selection. The oak was 35% new with the remainder a combination of second and third-fill. The wine spent 14 months in barrique. Tasting note: Nose of nougat, quince and tropical fruit aromas, following on the palate. Flavours lingering in the mouth and enticing you to take another sip.

Teddy Hall Tribute Methode Cap Classique 2003

Vinification entailed a gentle pressing before the juice was inoculated with yeast in order to start the primary fermentation. Part of this wine was fermented in second fill French oak barrels. Five months later, the wine was removed from tank and barrel. It was inoculated again to undergo its second fermentation in bottle. The bottles rested in a temperature-controlled cellar for 78 months. This process ensured the autolytic ‘just-baked’ bread character that is so typical of the wine. The final step was expelling the dead yeast cells and topping up the bottles before the final corking. Tasting note: As befits a bubbly, this Blanc de blanc Methode Cap Classique is full of vigorous fine bubbles! A touch nervous with its vibrant acidity, carrying the Chardonnay’s fruit and yeasty, freshly baked bread, honey, caramel and fresh cream flavours. Complex with great depth.

The Semillon fermented in 300 Litre French oak and aged on fermentation lees for 8 months. Tasting note: This classic blend has a focussed duration of flavours reflecting the cool coastal origin. A bright complex taste of lime, fig and peach and a waxy long finish.

Villiera Mother Earth 2008

At Villiera our ‘unlocking nature’ approach is beginning to pay off. Harnessing nature in the vineyard and cellar has intensified flavour and eased our conscience. The 2008 Auction blend consisting mainly of Cabernet Franc was made from fruit picked at optimum ripeness.The grapes were crushed and destalked before being transferred to a red wine fermentation vessel. Regular pump overs ensured good texture and colour. After gentle pressing, the young wine was racked to new French oak barrels for malolactic fermentation. Evolution in the barrels was enhanced by 2 rackings and the wine was finally removed after 2 years before being bottled. Tasting note: The wine displays an attractive dark red colour with intense aromas of dark berry fruit and a hint of spice and herbs. The new oak makes a subtle contribution with nuances of vanilla and coffee on the palate. The wine is well balanced with ripe, dry tannins and a rich, long finish, ensuring sufficient structure for extended maturation.

Villiera Shooting Star 2007

Slightly unripe, healthy fruit was whole bunch pressed in a pneumatic bag press. Only the Cuvee (500 Litres/ton) was settled and naturally fermented. After stabilisation and addition of liqueur de tirage, the wine was bottled for second fermentation. After 2 years on the lees, this sparkling wine was riddled and disgorged. Dosage ensured perfect balance and a further 1 year on the cork has resulted in greater harmony. Tasting note: Rich, creamy, yeasty nose with a full, ripe toasty flavour on the palate, developing finesse and complexity on the aftertaste. Powerful and bracing to drink now but could develop more intensity with another year in the bottle.
