Ataraxia Chardonnay 2010

Sourced from a singularly unique vineyard site in the upper Hemel-en-Aarde Valley. Intensely interventionist fruit selection was followed by an extreme non-interventionist winemaking approach. This wine was 100% fermented and matured in French oak barrels personally sourced from selected coopers in the Burgundy region of France. Fortnightly battonage was employed throughout the 9 month maturation period before the wine was carefully prepared for bottling. Tasting note: Made as a ?vin de terroir?, this wine reflects both the ancient soils and the heavily moderating maritime influenced meso-climate in which the vines grow and the fruit ripens. The result is a wine that reflects its New World provenance yet is Old World in stylistic leaning. Signatured by minerality, it effortlessly manages to be both subtle and intense on the nose and the palate. Classy and complex. Drink now and for the next 7 to 10 years.

Boekenhoutskloof Syrah Auction Reserve 2009

The fruit for this wine was grown on Porseleinberg, an organic vineyard owned by Boekenhoutskloof. The grapes were harvested in the second week of February and chilled in a cold room overnight. Multiple hand selection was followed by de-stemming without crushing. The must was left to cold macerate for four days before the alcoholic fermentation was initiated, naturally. Alcoholic fermentation took 14 days to complete and the wine was left on the skins for a further week before pressing into a second fill Saury barrique. One racking was done at 18 months; the wine was fined, matured for a further 9 months, fined again and bottled. Tasting note: The nose offers complex notes of blackcurrant, ground pepper, nutmeg with floral undertones. The palate is textured, full and has great length with a meaningful freshness on the end as a result of the schist. Cellar until 2017.

Boplaas Cape Vintage Auction Reserve 2006

Touriga Nacional, Tinta Barocca, Souzao Sheltered by the majestic Swartberg at the very edge of the Cape winelands, lies the Karoo hamlet of Calitzdorp, home to the Nel family of Boplaas since the early 1800’s. It is from fruit produced from these ancient Karoo soils that Carel Nel has for over a quarter of a century, toiled to produce the finest Cape Ports, wines and brandies. Tasting note: Darker than a moonless Karoo night, with a tinge of bright purple at the rim. Freshly tilled red earth, ripe apricot, fynbos, pepper, all-spice and a hint of spirit on the reluctant bouquet. Bullish tannins with hints of fresh plum, sweet apricots, all-spice, loads of liquorice and fynbos dominate the superbly structured palate. This Cape Vintage Reserve is the culmination of more than a quarter century?s Port making efforts of the Nel family to create an almost flawless Cape Port that will age for more than four decades or so, if stored optimally. Boplaas CWG Auction Potstill Brandy 10 Year Old

Colombar Potstill Brandy A decade of patience and unfaltering faith in his labour all that time ago, has rewarded Carel Nel with a potstill brandy of exceptional quality, complexity and concentration. Farmed in the deep red soils of Calitzdorp, the Colombar was double distilled in an old copper potstill in much the same way as the first Boplaas Brandy in 1880. Tasting note: Rich golden colour. The decade in old Limousin casks, climatic conditions of the Klein Karoo and the insatiable thirst of the local angels has created a brandy brimming with ripe stone fruits, honey, kumquat, herbal and floral notes and a sublimely smooth mouth-feel and finish.

Boschkloof CWG Conclusion 2007

Cabernet Sauvignon 55%, Merlot 20%, Cabernet Franc 21%, Petit Verdot 4% Harvested by hand. Fermented naturally with very long skin maturation – 35 days on the Merlot and Petit Verdot. The Cabernet Sauvignon and Cabernet Franc were left on skins for about 20 days. The wines were blended after 9 months and matured for another 18 months in new, small French oak barrels. Tasting note: This is a classic blend with lots of ripe fruit, hints of chocolate, almonds and nuts. Lovely wood flavours that add complexity. This is a big wine with lovely tannin structure for bottle ageing. Drink in 2013.

Bouchard Finlayson Pinot Noir 2009

In the winemaking, 10% of the grapes were supplied as whole bunch and 60% as whole berry. The wine underwent cold maceration for 3-4 days with post fermentation maceration of ten days. Lightly pressed and barrel matured for 16 months. The wine was bottled with minimal filtration after thorough microbiological examination. Tasting note: Profound, complex fruity flavours with deep wild forest and red berry earthiness and full mouthed acid tannin balance. Should age for up to seven years. Drink now and until 2018.

Cape Point Vineyards Barrel Fermented Sauvignon Blanc 2010

The grapes for the wine are picked from the Isliedh Vineyard on the Noordhoek property from extremely weak vines yielding only 2 tons/hectare. Grapes are whole bunch pressed in an oxidative manner and put to barrel without settling. Spontaneous and inoculated fermentations take place in 50% new and 50% 2nd fill barrels with the blend compiled directly after ferment. The wine then spent 13.5 months in barrel with regular battonage before being bottled in May 2011. Tasting note: Limes, grapefruit and floral elements dominate the nose with subtle oak. The palate is fresh with a floral, limey intensity and a persistent finish. Drink now and over the next 5 years.

Cederberg Teen die Hoog Shiraz 2009

100% Shiraz The name ‘Teen die Hoog’ was given by the workers on the farm – not because they see this cold South Easterly facing red slate hill as the highest vines in the country, but because they see it as their toughest pick of the season. The grapes were picked at great phenolic ripeness at the beginning of April after a long ripening period. Cold maceration for 4 days was followed by pump-overs every 6 hours. The wine went through malolactic fermentation in new French oak, where it matured for 15 months. Unfiltered, this is a selection of the 3 best barrels. Tasting note: Power with elegance. Modern and delicious. Intense Shiraz fruit. The low-yielding red slate vineyards result in lovely roasted coffee, ripe plum with dark chocolate and spicy fynbos flavours. Velvety texture with supple, well balanced tannins. Impressive length and a long finish. Will develop superbly over the next 5 to 8 years.

100% Sauvignon Blanc A selection from the Amandelboord vineyard. The grapes were hand-picked, had 18 hours skin contact and were then pressed before settling. Fermentation took place at 14 degrees C for 20 days, followed by 100 days of lees contact before stabilization and bottling. 40 cases of this wine were sold at the 2010 Auction.

De Grendel Op die Berg Pinot Noir 2010

The fruit originates from Witzenberg (Ceres), 950 metres above sea level. Shale-type soils. Due to the cool conditions, long moderate ripening time ensures a complex wine with exotic fruit. Hand-picked, crushed, cold skin contact for two days. Fermentation for nine days. Pressed with a basket press. Malolactic fermentation in new and second fill barrels. Maturation for 13 months in new, first and second fill barrels. Bottled without filtration. Tasting note: Bright red colour. Flavours of fynbos, spiciness, earthiness – supported by oak. Medium structure supported by natural firm acidity. Lingering aftertaste ensuring longevity. Drink this wine in 5 years.

Cabernet Franc 50%, Merlot 25%, Cabernet Sauvignon 25% The grapes are from our carefully manicured Mont Fleur vineyard 400m above sea level, between the Helderberg and Stellenbosch Mountains. Planted in 1994 with narrow 2m rows and a high planting density of 5000 vines/hectare. Open-top fermentation in a small tank, two days pre-fermentation soak, fermentation with indigenous yeast and four days post-fermentation maceration. A total of 14 days on skins. Drained into new French oak barrels for malolactic fermentation and 20 months maturation before bottling unfiltered. No fining. Tasting note: Still obviously very youthful, but showing some attractive fruit and soft fine tannins. 100% new oak nicely integrated on the palate with a long finish. Complexity should develop with time. Drink this wine in 4 to 10 years.

De Trafford Sijnn Touriga Nacional 2009

100% Touriga Nacional This 5 year old bush vine vineyard on gently sloping slate, about 70 metres above the banks of the Breede River, produced a mere 2 tons / hectare. Picked in the early morning and transported to Stellenbosch in a cool truck. Spontaneous natural yeast fermentation followed sorting, crushing and de-stemming. Time on skins was 9 days, with skins punched down 2 to 3 times a day. Single pressing in traditional basket press and malolactic fermentation in barrels. We used 2 new 225 litre barrels for the first year and a single 400 litre old barrel in the second year of maturation. Time in barrel was 22 months. The wine was bottled by hand, unfined and unfiltered. Tasting note: Attractive medium deep red colour and an attractive dry finish. A truly unique wine from the exciting new ward, Malgas. Slate, wild fruits, herbs and a spicy leafiness on the nose. Barrel maturation character evident, but not specific oak flavours. Soft, though quietly substantial palate with a nice texture, excellent complexity and an attractive dry finish. This wine needs 3 to 4 years to evolve and should last a lot longer.

Edgebaston Chardonnay ‘Tete du Ciel’ 2009

This wine is made from grapes grown on the Clos du Ciel property. It is an example of a site specific wine from a relatively old and low yielding vineyard dedicated to a single variety which makes it interesting. One of a planting selection of 7 clones of Chardonnay, this barrel of juice was fermented with a relatively high percentage of solids to accentuate the flavours of the site. Spontaneous fermentation started in a concrete egg and was followed after 3 months maturation by a further 12 months in a new D&J barrel before fining in barrel and bottled unfiltered. Tasting note: Very taught, mineral, lime and clean, white flower flavours lead to the palate where a fresh, crisp acidity is backed by the oak. Extremely youthful and made to age for a number of years. Drinking at its optimum in 2015.

Ernie Els CWG 2009

Cabernet Sauvignon 60%, Shiraz 30%, Merlot 10% The grapes were hand-picked in the cool of early morning. Grape bunches were gently destalked with a Bucher de-stalker and lightly crushed. On the sorting table, all excess stalks and rotten berries were removed carefully by hand. Fermentation took place in 7-ton, open top stainless steel tanks with yeast WE 372 being added to the juice. The wines were pumped over and punched down manually 5 times per day, ensuring maximum colour extraction from the skins. After primary fermentation, the maceration period was 14 days before pressing. Each variety was separately vinified and blended after 18 months of maturation. Tasting note: The nose is finely tuned cassis, a touch of earth, graphite and meat spice. The silky structure is built like a sky-scraper, towering over a full-bodied, deeply textured palate. The Cabernet Sauvignon and Merlot produce a classic feel, with 30% Shiraz adding a spicy, savoury complexity. The finish is extremely fine and elegant. Relish opening in 5 to 10 years to expose its full potential.

Flagstone Happy Hour 2009

Mostly Sauvignon Blanc and Semillon with a touch of Viognier, the grapes all originate in the cool climates of Elim and Elgin. All barrel-fermented and then aged in barrel for 10 months. This wine has been designed to live for at least 10 years from bottling. 80 cases of this wine were sold at the 2010 Auction. Tasting note: Intense green fig, green pepper, passion fruit and spice on the nose. Very concentrated, structured wine on palate showing citrus, vygie, green pepper, orange and cinnamon / vanilla toasty oak. Drink within the next 10 years.

The Chardonnay and Pinot Noir are whole bunch pressed and only the cuvee fraction used. A portion of Chardonnay is fermented in Piece Champenoise barrel for richness and creamy complexity. Time on the secondary lees is encouraged to promote the principle of Non Plus Ultra. Tasting note: Mineral notes with fresh lime and ripe citrus on the nose. Rich red berry fruit burst on the palate with creamy and gentle mousse, ensuring rich and complex lingering flavours. Drink from 2012 to 2015.

100% Muscat de Frontignan Enzymatic fermentation on the skins until desired natural alcohol is achieved and then fortified and left in old French oak barrels for a total of three thousand and one nights. Tasting note: Attractive green hue in the golden colour with elegant almond flavours. Grape Muscat tones and rich warm aromatics from the oak. Great length of flavour. Drink now to 2014.

Although labelled as Cabernet Sauvignon, this wine includes a splash of Petit Verdot (6%). Selected from a prime Stellenbosch vineyard, fermented in open tanks, basket pressed and matured in 225 litre French oak barrels for 20 months. Tasting Notes: Dark ruby with a slight garnet edge. Violets and red berry aromas and flavours with subtle cedar and mocha to complement the fruit. Firm, ripe tannins and a robust structure that should enable this wine to develop and improve for at least 8 years from vintage.

Groot Constantia CWG Reserve White 2010

Semillon 67%; Sauvignon Blanc 33% Both the Semillon and Sauvignon Blanc grapes were hand picked, fermented and matured separately in 500 litre and 225 litre French oak barrels on lees for 9 months with a stirring of the lees once a month. 100% French oak was used with 33% 1st fill barrels, 33% 2nd fill barrels and 33% 4th fill barrels. To preserve the fine quality and complexity, this wine was subjected to minimum stabilisation and filtration. Tasting note: The wine has a pale straw colour with a lime tint. It shows delicate orange blossom, gooseberry and almond flavours on the nose. The wine opens up in the glass to show green pepper, summer fruit and minerality. The flavours follow through on the palate and have a rich, creamy texture.

Groot Constantia CWG Shiraz 2009

100% Shiraz The grapes were handpicked at 24.9 degrees balling. The juice was fermented in open 500 litre French oak barrels, with punch downs every 4 hours At 5 degrees balling the wine was transferred to a stainless steel tank to finish fermentation. Extended skin maceration was done for 14 days after fermentation before it was pressed. The wine was matured for 12 months in 100% French oak barrels, 90% 1st fill barrels and 10% 3rd fill barrels. Hartenberg Estate Auction Shiraz 2009

100% Shiraz This wine combines two unique and contrasting places of origin. The best single barrel of our deep, clay-rich Stork Shiraz vineyard was blended with two barrels of the stony Gravel Hill Shiraz vineyard. The former lends richness and power, whilst the latter provides elegance, finesse and longevity. Malolactic fermentation was carried out in barrel and the wine spent 22 months in all-new, French oak barriques. Tasting note: Red – black rim with dark core. White pepper and truffle notes show on bouquet entry. With air, the nose opens to show violets, black fruit and hints of Garrique. 86% Merlot, 9% Cabernet Sauvignon, 5% Malbec This wine represents the best of the vintage from the Estate, modelled on the wines of right-bank Bordeaux. Hand – picked off a deep, red clay-loam soil. This single vineyard Merlot parcel represents the best of what we do. The balance of the vineyard finds its way to our Bordeaux Blend, The Mackenzie. The wine spent 20 months in 100% new, French oak barrels. Tasting note: Black-red in colour with a dark core. Intense aromas of mocha, plums, spices and other red and black fruits. Haskell The Expatriate 2009

Cabernet Sauvignon 51%, Shiraz 49% We harvested all the grapes together for fermentation in an open fermentation tank. Pump-over and punch downs were done 4 times a day with aeration on every second one. The mash was pressed after 15 days and malolactic was completed in stainless steel tank. This is a selection from 100% Francois Frere barrels. Tasting note: Ruby-red colour with purple rim. The nose shows flavours of black cherries, mulberries, chocolate powder and soft hints of liquorice. The palate has a soft entrance with lovely ripe fruit tannins in perfect harmony with the oak nuances. Drink in 2014 and beyond.

Jordan Chardonnay Auction Reserve 2010

Specially selected for the CWG Auction, this Reserve Chardonnay is traditionally made using natural, wild yeast from the acclaimed Nine Yards Chardonnay vineyard. Intensely concentrated lemon-lime flavours and slow fermentation in 228 litre Burgundian oak barrels for twelve months has resulted in a classic style with a new world twist. Quartzite veins through the 600 million year old granite sub-strata provide the backbone for the minerally flavours. Regular barrel rolling accentuates the rich, leesy character in this elegantly expressive wine. Tasting note: An iconic Chardonnay with intense, minerally, lemon-lime flavours and hints of butterscotch and vanilla. The full, rich mouth-feel and balanced oak integrates superbly with the tropical fruit finish. Drink from 2011 ? 2020.

Jordan Sophia 2008

Cabernet Sauvignon 44%, Merlot 44%, Cabernet Franc 12% A blend of the best ‘Cobblers Hill’ barrels and a reserve Cabernet Sauvignon, this wine has been named ‘Sophia’ after the legendary mother of Faith, Hope and Charity. Representing the characteristics of the three Bordeaux varieties that make up this exceptional wine, the Cabernet Sauvignon, Cabernet Franc and Merlot grapes were harvested from the best hillside vineyards at Jordan, with views overlooking Table Mountain and False Bay. Fermented at 28 degrees C with three pump-overs daily over the fermenting cap. After pressing, the wine was racked to barrel where it completed malolactic fermentation. The wine spent a total of 26 months in 225 litre French oak barrels to integrate the rich tannins and add complexity. Tasting note: Complex, dark chocolate, black cherry and cassis intertwine with rich blackberry fruit and hints of vanilla and spice from the integrated French oak. Densely layered ripe tannins add to the opulent finish. Well-structured, this wine will reward careful cellaring for many years to come. Drink 2013 – 2023 and beyond.

After a light pressing, the Pinotage underwent malolactic fermentation before going into 100 % new French oak barrels for 24 months. Tasting note: Saturated plum colour with purply black, opaque heart; focused Pinotage expression with intense layers of brooding black fruit and opulent oak, woven into a rich tapestry of flavour. Muscular tannins add depth and balance to plush fruit. Firm structure and rich texture will evolve beautifully with some 5 – 8 years cellaring.

100% Pinotage 20-50 year old bush vines with yields of 3-5 tons/hectare were used to make this wine. The grapes were de-stemmed, sorted, crushed and then fermented in open concrete “kuipe” for 4 days. The wine underwent malolactic fermentation in barrel and was then treated to a further 14 months of barrel ageing. Tasting note: Deep red colour with a strawberry and plum aroma with a touch of vanilla. Dark fruit on the palate with plum and blackcurrant being the focus, with mocha flavours adding complexity. 100% Cabernet Sauvignon The grapes were hand selected on the sorting table to ensure that only the purest fruit, even berry size and 100% pit ripeness was obtained. 50% whole berry and 50% slightly crushed grapes were cold soaked for three days. Inoculated with yeast, traditionally open fermented and punched down, followed with extended skin contact period of 5 weeks. The wine was then matured for 24 months in hand selected 100% French oak barrels of which the wood was 36 months seasoned. Tasting note: Waves of deep-piled forest fruit, vegetative and gamey notes with a pure savoury tannin finish. Neil Ellis Rodanos 2007

Shiraz 61%, Grenache 39% Exquisite parcels of Jonkershoek Valley Syrah and Piekenierskloof Grenache were vinified separately in open top fermenters. Towards the end of fermentation, the wine was racked into 100% new oak where the wine completed fermentation. After malolactic fermentation, individual components were classified and selected for inclusion into this blend. 17 months barrel maturation followed. 100 cases of this wine were sold at the 2009 Auction. Tasting note: Deep in colour, this youthful elemental wine shows wonderful overlapping of aromas and flavours. Although oak is obvious on the nose, sweet ripe fruit is finely poised. Rich, ripe, generous soft mid-palate with a juicy impression is supported by layered complexity. Well defined fine-grained tannins will allow for continued evolving in the cellar over time. Sauvignon Blanc 65%, Semillon 35% After careful selection of our finest, most expressive Sauvignon Blanc and the best new barrel of Semillon, this wine was blended together. Thereafter the wine was placed back into seasoned barrels for a further 9 months to allow for the full integration of the 2 components and to build the mouth-feel of the wine. It was then gently racked from the barrel and bottled after careful filtering. Tasting note: Intensely alluring with fascinating balance and depth. Nitida Decorous Sauvignon Blanc 2010

Durbanville is well known for its Sauvignon Blanc. Over the years we have made Sauvignon Blanc to have a broader appeal in the market. With this wine we have looked for characteristics that are aimed at purist consumers of Sauvignon Blanc who are looking for a racy, expressive wine. We have held this wine back for a year to allow the wine to further develop in the bottle and show its full potential. The grapes saw a late start with delayed budding from a cold and wet September with daily temperatures well below 25 degrees. We managed our vine canopies to maximise thiols, always mindful to not compromise our characteristic high Durbanville pyrazines. We selected grapes carefully from specific vineyards and these were kept separate throughout the processing before the wine was finally blended from our 2 favourite tanks. Tasting note: Inspires a myriad of impressions. Lemon meringue with gooseberries, Seville oranges and Bramley apples. Minerally nettles with just a pinch of Provence herbs. Essential with a snoek beach braai or lunchtime rocket and parmesan salad at the pool Drink this year and in 2012.

Overgaauw D.C. Classic 2009

Merlot 78%, Cabernet Sauvignon 22% This wine has, since the first release on the auction, been inspired by my father David Conradie van Velden, a true pioneer in the South African wine industry. The focus is to express the uniqueness of Overgaauw Wine Estate terroir in a bottle. The different parcels for this blend were identified according to the site and clone attributes. Hand-picked, optimum ripe berries were hand sorted and lightly crushed. Extended skin contact for 14 days after fermentation ensured the tannin extraction and integration for a firm yet elegant mouth-feel. Malolactic fermentation in barrel followed. After another strict selection, the wine matured in French oak barrels for 24 months without racking. Tasting note: Aromas of cassis, raspberry and a unique hint of minerality are complemented by a pleasant concentration and fruit length on the palate. Drink this wine from 2016 to 2020.

Paul Cluver CWG Pinot Noir 2010

The grapes were sourced and selected from our highest lying mountain vineyards on De Rust Estate and are all new clones (667,113,115). The grapes were harvested, cold soaked for 6 days with the fermentation starting naturally and then inoculated. Punched down 3 times per day. After fermentation, only free run juice was transferred to barrel for malolactic fermentation. The wine was then left in barrel for 11 months before bottling. Tasting note: “Understated”, the colour is gentle and alluring, the nose reticent but intriguing. All in all, captivating! Initially, red stone fruit – cherries and plums – combined with sweet cherry blossom fragrances, dominate. Underlying there are whiffs of raw meat and wet, warm earth – like after a sudden rain storm in summer. There are also hints of wild mushroom and pepper. The texture is astounding and where the power of this wine lies. The integration of oak adds to its finesse and aristocracy. The palate is a symphony of flavours, starting with the cherries; the mid palate is concentrated with a distinct mineral character and a very long after taste. The wine is ready for drinking now and until 2020.

100% Chenin blanc The grapes were hand picked at night, 100% barrel fermented and matured for 12 months in 40% new and 60% 2nd fill French oak barrels. 50% of this wine was fermented with wild yeast. No malolactic fermentation took place. Tasting note: Light straw colour. Attractive peach and apricot aromas dominate the nose with hints of quince and apple strudel. Rijk’s CWG Pinotage 2009

100% Pinotage The grapes were hand picked at night. 56 hours cold maceration prior to fermentation. Pigeage took place 3 times per day to extract tannin and colour. Skins were pressed at 5 degrees balling. Malolactic fermentation took place in barrels. Matured for 20 months in 70% new and 30% 2nd fill French oak barrels. Tasting note: Alluring rich red colour. Intense nose of cherries and bramble fruit with underlying cinnamon notes. The palate is well weighted and balanced, with elegant tannin to ensure great maturation potential. The wine will be ready for drinking in 2014.

Rust en Vrede Single Vineyard Cabernet Sauvignon 2009

100% Single Vineyard Cabernet Sauvignon The vineyard is North facing and consists of a mixture of decomposed Helderberg granite and Table Mountain sandstone, classified as a Tukulu soil type with medium growth potential. The Cabernet Sauvignon clones 163 and 46 were grafted onto 101-14 rootstock and the vineyard was planted in 2000 and yielded 4.75 ton/ha in 2009. The grapes were harvested according to NDVI growth patterns in 3 sections on 9 March and 20 March 2009 and these sections were vinified separately. Fermented in open top fermenters at 28 degrees C for 7 days, punched down 3-5 times per day and macerated for a further 14 days. Malolactic fermentation took place in barrel and the wine was matured for 19 months in 100% new French oak barrel. 1008 bottles were bottled on 9 Dec 2010. Tasting note: An intense ruby coloured Cabernet Sauvignon with classical aromas of cassis and pencil shavings. A lovely combination of raspberry and blue-berry fruits with inky, savoury characters supported by the presence of a subtle oak aroma that needs a bit more time to integrate fully. Attractive layers of Christmas pudding, Black Forest cake, raspberry and cedar on the palate. The structure is packed with strikingly fine grained fruit tannins supported by a solid oak backbone ? fine enough to enjoy but firm enough for long cellaring. This is a unique wine from Rust en Vrede and I?m looking forward to the evolution of the 2009 Single Vineyard Cabernet Sauvignon with confidence. Drink from 2012 onwards.

Saronsberg Die Erf Grenache 2010

Grenache 87%, Shiraz 13% After a challenging growing season, we only harvested 1,3 tons of super concentrated Grenache from 2 hectares of bush-vines. This wine was produced to showcase what this cultivar is capable of. The grapes were force cooled, partially de-stemmed and fermented in an open-top stainless steel tank. After a two-day cold soak, the wine was fermented dry on the skins. During fermentation the cap was manually punched down five times daily. After fermentation the wine was pressed and aged in second-fill French oak barrels for 15 months where it also went through malolactic fermentation. Thirteen percent of Shiraz was blended in to top the barrel. Tasting note: A fragrant melange of violets, raspberry and darker berry fruit flavours with subtle spice aromas fill the nose. The palate is silky and full-bodied, packed with concentrated, ripe fruit flavours showing great length and weight. Best for drinking in 2012.

Simonsig Pick of the Bunch Pinotage 2009

100% Pinotage The 14 year old bush vine Pinotage is organically farmed yielding a meagre 4.4 tons/hectare. Ripening was slow and picking was 10 days later than 2008 on 19 February 2009. Phenolic maturity was only achieved with sugars in the high twenties. Two days of cold soak in traditional open fermenters was followed by a short, hot fermentation peaking at 30?C. Manual punch down was done every 2 – 3 hours. During the press cycle a special cut was made when the whole berries burst open yielding exquisitely concentrated fruit. Only two new Vicard Prestige Allier, Medium Toast barrels were filled and after 15 months the wine was bottled. Tasting note: Opaque in colour with a vibrant, youthful purplish rim. Beautiful blackberry and plum fragrances dominate the nose. The high intensity fruit aromas are further complexed by subtle mocha and spicy oak flavours. Succulent sour cherry flavours are framed by mouth-filling sweet tannins. A richly flavoured classic Pinotage from an outstanding vintage. Drink from 2015 to 2029.

Spier Merlot 2009

100% Merlot The grapes are picked from a vineyard planted on a North Westerly slope at 120 metres above sea level. The grapes were harvested at full ripeness. Picked in 10 kg lug boxes and pre-cooled to 8 degrees C prior to crushing. Hand sorting of the bunches was followed by de-stemming, berry sorting and then crushing. Fermentation took place in open French oak fermenters. Malolactic fermentation happened in barrel, followed by 22 months barrel maturation before bottling. Tasting note: The wine shows aromas of cherry, berries and smoky spice with an undertone of savoury earthiness and subtle mint chocolate. The wine is rich and complex with a silky mid-palate and long lingering finish. Drink now or within the next 8 to 10 years.

Chenin blanc from a vineyard 280 metres above sea level, picked by hand, crushed and softly pressed. After twelve hours of settling, the wine was racked to Vicard Prestige barrels. The wine underwent natural fermentation in oak and was aged for 12 months. The wine was assembled with minimum interference to give a wine reflecting the grape in its purest form. Villiera Shooting Star Cap Classique Brut, Chardonnay 2008

Slightly unripe, healthy fruit was whole bunch pressed in a pneumatic bag press. Only the Cuvee (500 Litres/ton) was settled and naturally fermented. After stabilisation and addition of liqueur de tirage, the wine was bottled for second fermentation. After 2 years on the lees, this sparkling wine was riddled and disgorged. Dosage ensured perfect balance and a further 1 year on the cork has resulted in greater harmony. Tasting note: Rich, creamy, yeasty nose with a full, ripe toasty flavour on the palate, developing finesse and complexity on the aftertaste. Powerful and bracing to drink now but could develop more intensity with another year in the bottle.

Vriesenhof Pinot Noir 2010

100% Pinot Noir This wine is a blend of different clones from the 2010 vintage. A selection of barrels from mainly 777 and 115 from our Pinot Noir vineyards on decomposed granite soils is responsible for the blend. As the ripening of the clones is very different, the wine was blended after malolactic fermentation in the barrels. Maturation was completed after 13 months in heavy toasted French oak before bottling. Tasting note: Strong earthy forest floor, pine needles and some dampness are the main features of this wine. In time it will become more balanced and creamy with the wood underpinning the mouthfeel.

This blend was made in winter 2005 and allowed to age as a unit for 23 months in tight grained French oak barrels. After a single egg white fining prior to bottling, the wine has been allowed to age another 4 years in bottle. 70 cases of this wine were sold at the 2009 Auction. Tasting note: This wine shows the classical Helderberg character of Cabernet Sauvignon with distinctive earthy tones that are laced with hints of graphite and violets.
