Ataraxia Under the Gavel Chardonnay 2011

Sourced from a single south-facing vineyard on The Skyfields, home to Ataraxia in the Hemelen-Aarde outside Hermanus. Intensely interventionist fruit selection was followed by an extreme non-interventionist winemaking approach. Fermented in small French oak barriques, custom ordered from very specific Burgundian coopers, this wine was barrel aged for a further 9 months before being bottled. Tasting Notes: This wine reflects both the ancient soils and the heavily moderating maritime meso-climate of The Skyfields terroir. Although New World in provenance, it is decidedly Old World in stylistic leaning. Signatured by minerality, it effortlessly manages to be both subtle and intense on nose and palate. A complex wine which shows both class and pedigree.

Beyerskloof Traildust Pinotage 2010

The grapes were hand-picked on 4 February 2010 from block A (bush vines) which is planted on the famous Bottelary gravel soils. On this specific block, we only left one grape bunch per shoot. The grapes came into the cellar at optimum ripeness, with the following analyses before fermentation: 26.2 degrees B; pH – 3.84; TA – 7.3 g/l; AS – 3.9 g/l. The juice stayed on the skins for 4 days at an average temperature of 23.5 degrees C. Punch-downs were done every 2 hours during fermentation and the juice was separated from the skins at 4 degrees balling. After malolactic fermentation, the CWG selected Pinotage went to 225 litre new French oak barrels for 21 months. Tasting Notes: Deep, dark red colour. Rich bouquet of black berries, dark cherries, prunes and cedar oak flavours. A complex Pinotage with an excellent balance between fruit and oak. This wine should develop well in the bottle over the next 10 to 15 years.

Boschkloof Bakhand Shiraz 2010

Harvested at optimum ripeness and fermented in 500 litre open barrels. Natural fermentation took place with no temperature control. The wine was punched down by hand four times a day. After alcoholic fermentation, the wine was left on skins for 14 days. Malolactic fermentation took place in barrels and the wine was left on lees for 5 months. Tasting Notes: Deep, dark, concentrated colour with lots of beautiful white pepper spice and violet flavours on the bouquet. Great mid-palate with layers of Shiraz fruit. This is a big wine showing lots of elegance, lovely soft velvety tannins and a lingering aftertaste.

Bouchard Finlayson Pinot Noir 2009

In the winemaking, 10% of the grapes were supplied as whole bunch and 60% as whole berry. Cold maceration for 3-4 days with post fermentation maceration of ten days. Lightly pressed and barrel matured for 16 months. The wine was bottled with minimal filtration after thorough microbiological examination. Tasting Notes: Profound, complex fruity flavours with deep wild forest red berry earthiness and full mouthed acid tannin balance. Should age for up to eight years.

Cape Point Vineyards Auction Reserve White 2011

The grapes for the wine were picked from the Isliedh and Semillon Vineyards on the Noordhoek property, from extremely weak vines yielding only 2 tons/hectare. The grapes were whole bunch pressed in an oxidative manner and put to barrel without settling. Spontaneous and inoculated fermentations took place in 20% new and 80% second fill (and older) barrels with the blend compiled directly after ferment. The wine then spent 13.5 months in barrel with regular battonage before being bottled in May 2012. Tasting Notes: Limes, grapefruit and floral elements dominate the nose with subtle oak. The palate is fresh with floral elements, citrus and a persistent finish.

Carel Nel Cape Vintage Auction Reserve 2010

Celebrating his 24th year as member of the CWG and his 24th consecutive wine on auction. Carel is a Cape Wine Master and founding member and chairman of the Cape Port Producers Association. His accolades include SA Champion Port and SA Champion Sauvignon Blanc. Many Veritas double golds and other award winning wines have been made under his watch and guidance. Carel has dedicated himself to shifting the perception of the possibilities of the Klein Karoo by planting traditional Douro varietals in Calitzdorp for the crafting of proper ‘Port’ and table wines, and was the very first to plant high up in the Outeniqua with cold climate varietals. Tasting Notes: Crafted from a trio of hand-harvested Portuguese varietals fermented in custom built lagares with intensive manual pigeage; fortified with pure wine spirit at the optimal moment to capture varietal integrity; aged a year in large old French barrels prior to blending and bottling unfined unfiltered. Inky black crimson wine radiating ripe hedgerow fruit, plum, all-spice, fynbos and orange rind undertones encapsulated by impenetrable tannins ensuring decades of enjoyment.

Cederberg Ghost Corner Semillon 2011

Skin contact for 8 hours and only free run juice was used. 50% of the wine was cold fermented in stainless steel and 50% was fermented in French oak for 4 months before the wines were blended to show fresh Semillon fruit with a creamy lees character. Tasting Notes: The cool maritime climate of Elim expresses elegant aromas of green fig, nettles and dusty dry fynbos with a distinctive minerality. The fermentation in French oak has added complexity and length with smoky bacon nuances. A well balanced wine with a crisp acidity. Ideal with fresh seafood, or on its own. Best enjoyed 4-6 years from vintage.

Cederberg Teen Die Hoog Shiraz 2010

The name ‘Teen die Hoog’ was given by the workers on the farm -not because they see this cold south easterly facing red slate hill as the highest vineyard in the country, but because they see it as the toughest pick of the season. The grapes were picked at great phenolic ripeness at the beginning of April, after a long ripening period. Cold maceration for 4 days was followed by pump overs every 6 hours. The wine went through malolactic fermentation in new French oak where it matured for 15 months. This is a selection of the 3 best barrels. Tasting Notes: Intense Shiraz fruit with lots of red berries and mulberries. A combination of wild herbs, violets and white pepper aroma, distinctive of the high lying red slate vineyards. A firm structure with sweet spice and roasted coffee bean flavours that linger on the palate. A wine to mature and develop superbly over the next 4 to 8 years.

Chamonix Chardonnay Auction Reserve 2011

Grapes were de-stemmed, soft crushed and fermented spontaneously in French barriques and concrete eggs. The wine remained on its lees for 14 months where it underwent malolactic fermentation. The Auction Reserve is a selection from our 24 year old vineyard at an altitude of 450 metres above sea level. Tasting Notes: It has bright straw yellow colour with golden highlights and exquisite aroma with scents reminiscent of tropical fruit, ginger, spice and oatmeal. Well-structured and minerally with flavours of lime, grapefruit and toasted almonds on the palate.

De Grendel Amandelboord Sauvignon Blanc 2012

The grapes come from a selected block – the Amandelboord – and were picked at perfect balance between flavour, sugar and acid. Gentle crushing and skin contact, draining, settling, racking, fermentation. Lees contact, stabilisation and bottling. Tasting Notes: A combination of two of the prominent Sauvignon Blanc styles in South Africa, pyrazines and thiols. Flavours range from gooseberries to winter melon and kiwi fruit. This wine finishes with a soft but firm natural acidity.

De Trafford Perspective 2009

The grapes are from our carefully managed Mont Fleur vineyard around 400 metres above sea level, between the Helderberg and Stellenbosch mountains. Steep, decomposed granite soils. Planted in 1994 with narrow 2 metre rows and a high planting density of 5000 vines/ hectare. Open top fermentation with indigenous yeast, including a pre and post fermentation maceration. A total of 14 days on skins. Drained into new small French oak barrels for malolactic fermentation and 20 months maturation before bottling unfiltered. No fining. Tasting Notes: 2009 is a great vintage with exceptional ageing potential. Still obviously young, but showing intense, complex fruit and serious, fine tannins. 100% new oak nicely integrated on the palate with a long finish. Should develop well for many years.

De Trafford Syrah 2009

The grapes are from a single clone 470 from a new section planted in 2002 on our Mont Fleur vineyard 400 metres above sea level. Steep, strong granite based soils on small terraces on narrow 1.8 metre wide rows and a high vine density ensuring a maximum 1.2kg/vine. A single 225 litre new French oak barrel (Boutes Grand Reserve) was selected and the wine matured in it for nearly 3 years before being bottled unfiltered with no fining. Tasting Notes: The fruit of this exceptional vintage and vineyard is cloaked in a fine new oak wrapping that will unfold in time to showcase the inherent beauty. Almost a Cabernet-like structure on the palate.

Edgebaston Cabernet Sauvignon Auction Reserve 2010

Fermented in 1.5 ton open tanks and punched down by hand every 6 hours. 10 days on the skins. Matured for 18 months in new 300 litre French oak barrels. Tasting Notes: This is a selection of the very best grapes and subsequent barrels from our clone CS163, GS Vineyard. Intense Cassis and black fruit flavours dominate the nose. This wine has massive structure and deep, intense black berry flavours layered in a complex weave of fruit and oak. A wine that will partner rich meat dishes very well. The wine will reward maturation in the large format bottles.

Ernie Els CWG 2010

The grapes were hand-picked in the cool of early morning. Grape bunches were gently de-stalked with a Bucher de-stalker and lightly crushed. On the sorting table, all excess stalks and rotten berries were removed carefully by hand. Fermentation took place in small 300 litre open top, oak barrels with yeast WE 372 being added to the juice. The wines were punched-down manually 5 times per day ensuring maximum colour extraction from the skins. After primary fermentation the maceration period was 14 days before pressing. Each variety was separately vinified and blended after the 18 months of maturation. Tasting Notes: Complexity of graphite, salami and bacon notes balance anintense floral lift, whilst whiffs of mint and chocolate finally drift slowly through to a supple, layered palate. A lacy, cassis-cocktail stuns the palate all wrapped up with rich but etched tannins.

Graham Beck Non Plus Ultra Cap Classique 2008

Both the Chardonnay and Pinot Noir grapes were whole bunch pressed and only the cuvee fraction used. A small portion of the Chardonnay was fermented in Piece Champenoise barrels to promote the creamy texture and complexity. Pinot Noir is included for palate weight and length of flavour. The wine was matured for 50 months on the lees prior to disgorgement. Tasting Notes: Gentle mineral notes with fresh lime and ripe citrus on the nose. Rich raspberry notes burst on the palate with a creamy and gentle mousse, ensuring richness and finesse.

Graham Beck The Catalyst Shiraz Viognier 2010

The grapes Syrah and Viognier were picked at absolute phenolic ripeness, jointly destalked and then cool soaked for 3 days at 12 degrees C. Co-fermented by natural yeast with an extended skin contact time of 12 days. The wine was then pressed and taken to barrel for malolactic fermentation and barrel aging. Tasting Notes: Great primary fruit character with black cherries and floral character. Great perfume notes with a nice integration between the fruit and the wood. The careful interaction between Syrah and Viognier makes this intriguing wine grow to become the catalyst between mother nature and the enjoyment of this wine!

Groot Constantia CWG Shiraz 2009

The grapes were hand picked at 24.9 degrees balling. The juice was fermented in open 500 litre French oak barrels, with punch downs every 4 hours. At 5 degrees balling the wine was transferred to a stainless steel tank to finish fermentation. Extended skin maceration was done for 14 days after fermentation, before it was pressed. The wine was matured for 12 months in 100% French oak barrels, 90% first fill barrels and 10% third fill barrels. To preserve the fine quality and complexity, this wine was subjected to minimum stabilisation and filtration. Tasting Notes: This is a classic, well-balanced Shiraz with a deep red ruby colour. The wine shows dominant fruit like pomegranate, plums, dark cherries and blackcurrant that are balanced by delicate spice, white pepper, cedarwood and oak flavours. The spice and fruit that follow through on the palate combine with soft tannins to give a long lingering aftertaste.

Hartenberg Estate Auction Shiraz 2009

This wine combines two unique and contrasting places of origin. The best single barrel of our deep clay-rich Stork Shiraz vineyard was blended with two barrels of the stony Gravel Hill Shiraz vineyard. The former lends richness and power, whilst the latter provides elegance, finesse and longevity. Malolactic fermentation completed in barrel and the wine spent 22 months in 100% new French oak. Tasting Notes: Red-black rim with dark core. White pepper and truffle notes show on the bouquet entry. With some aeration, the wine opens up, showing violets, black fruit and hints of Garrique. The palate shows beautiful elegance and poise, silky polished tannins and a dry savoury finish. 50 cases of this wine were sold at the 2011 Auction.

Hartenberg Loam Hill Merlot 2009

Hand-picked off a deep red, clay-loam soil. This single vineyard Merlot parcel represents the best of what we are able to do. The balance of the vineyard finds its way to our Bordeaux blend, The Mackenzie. The wine spent 20 months in 100% new, French oak barrels. Tasting Notes: Black red in colour with a dark core. Intense aromas of mocha, plums, spices and other red and black fruits. The palate shows rich and opulent fruit with supple sweet flavours. Tannins are fine and dry, allowing further ageing.

The two components were made separately before careful selection for blending. Each one was chosen in order to complement the flavours of the other. The Cabernet Sauvignon had stronger red berry flavours than the classic pencil shaving flavours usually found in Cabernet Sauvignon and the Shiraz was less spicy and stronger on black fruit flavours. Both have a firm tannin structure. Tasting Notes: Plums, dark berries and cinnamon. Balanced fruity palate with cassis and subtle white pepper on the aftertaste. Firm balanced tannins for good aging.

Haskell Paradigm 2008

All grapes were hand harvested and sorted in the cellar before fermentation. Pump-overs took place 4 to 5 times a day with delestage on the Merlot at 12 degreees balling. Average maceration took place on skins for up to 15 days. This is a special selection from exceptional new barrels in the cellar and specially bottled to sell at the Guild Auction. Tasting Notes: Vibrant ruby colour, fresh dark fruity nose – plums, black cherries and cassis. An underlying flavour of dark chocolate. The palate is very smooth and more-ish. The fruit is well balanced with subtle wood flavour which ends lovely and dry. I have a passion for blending and love classic Bordeaux style wines and especially the wines from the Medoc, especially Pauillac.

John Loubser Garibaldi Nebbiolo 2009

Harvested from the mother block of Nebbiolo in South Africa. Fermentation in tank with 2-3 pump overs per day – malolactic fermentation in barrel – aged in second fill French oak for 13 months – fined with egg white and bottled with minimum intervention. Tasting Notes: Typical light colour (due to low colour pigment) – black cherry and stewed rhubarb with hints of fennel and minerality – great tannin texture – elegant yet complex.

Jordan Chardonnay Auction Reserve 2011

Specially selected for the CWG Auction, this reserve Chardonnay is traditionally made using natural, wild yeast from the acclaimed Nine Yards Chardonnay vineyard. Intensely concentrated lemon-lime flavours and slow fermentation in 228 litre Burgundian oak barrels for twelve months has resulted in a classic style with a new world twist. Quartzite veins through the 600 million year old granite sub-strata provide the backbone for the minerally flavours. Regular barrel rolling accentuates the rich, leesy character in this elegantly expressive wine. Tasting Notes: An iconic Chardonnay with intense, minerally, lemon-lime flavours and hints of butterscotch and vanilla. The full, rich mouthfeel and balanced oak integrate superbly with the tropical fruit finish.

Jordan Sophia 2009

A blend of the best ‘Cobblers Hill’ barrels and a reserve Cabernet Sauvignon, this wine has been named ‘Sophia’ after the legendary mother of Faith, Hope and Charity. Representing the characteristics of the three Bordeaux varieties that make up this exceptional wine, the Cabernet Sauvignon, Cabernet Franc and Merlot grapes were harvested from the best hillside vineyards at Jordan, with views overlooking Table Mountain and False Bay. Fermented at 28 degrees C with three pump-overs daily over the fermenting cap. After pressing, the wine was racked to barrel where it completed malolactic fermentation. The wine spent a total of 26 months in 225 litre French oak barrels to integrate the rich tannins and add complexity. Tasting Notes: Complex, dark chocolate, black cherry and cassis intertwine with rich blackberry fruit and hints of vanilla and spice from the integrated French oak. Densely layered ripe tannins add to the opulent finish. Well-structured, this wine will reward careful cellaring for many years to come.

30 year old trellised vineyards with 5 tons/hectare yields are used to produce this wine. The grapes were destemmed and sorted before fermentation, which took place in open top “kuipe” for 5 days. After malolactic fermentation, the blend was made and put in 100% new French oak barrels for 24 months. This is a selection of the best barrels of this wine. Tasting Notes: Deep cherry-red colour with raspberry, blackberry and a hint of bell-pepper on the nose. Rich blackcurrant and dark chocolate flavours add complexity to the velvet-like structure that finishes with a typical dry mouth feel.

After malolactic fermentation, the blend was made and aged for 24 months in 100% new oak. After ageing, a blend was made of the best barrels that were selected from the lot. Tasting Notes: Dark cherry red colour with black currant, cedar and some bell pepper on the nose. The palate is structured and the fruit carries through to a long, slightly dry, aftertaste.

These old bush vine vineyards were harvested by hand at 25 degrees balling. The grapes were de-stemmed, sorted and crushed. They were then fermented for 3 days in open top fermenters and punched down every 2 hours. The wine completed malolactic fermentation in tank and then spent 14 months in new French oak barrels before bottling. Tasting Notes: Very dark red colour with purple rim. The nose is packed with dark fruit, spice and some mocha flavours from the oak. The palate is rich and structured, with the fruit and spices lingering on. Enjoy with a wide range of dishes, from duck to spicy Asian style dishes.

Kleine Zalze Granite Selection Cabernet Sauvignon 2009

A small portion of hard rock granite soil was identified and with a phenolic analysis the total anthocynins of the grapes were 1184 mg/l. The shoulders of the bunch were removed at 80% veraison. The grapes were hand selected on the sorting table to ensure that only the purest fruit, even berry size and 100% pit ripeness were obtained. 50% whole berry and 50% slightly crushed grapes were cold soaked for three days. Inoculated with yeast, traditionally open fermented and punched down, followed with extended skin contact period of 5 weeks. The wine was then matured for 24 months in hand selected 100% French oak barrels of which the wood was 36 months seasoned. Drink this wine in 2020. Tasting Notes: Waves of deep-piled forest fruit, vegetative and gamey notes with a pure savoury tannin finish. A wine with a great length on the palate and with an alluring combination of black berries and cedar wood flavours.

The grapes are from the Helderberg and the batches were fermented separately, and left on the skins for a week before pressing. The wine then underwent malolactic fermentation in French oak barrels, and spent a total of 24 months in oak. Tasting Notes: Lots of red fruit, even some Helderberg herbaceousness mix with yummy tannins, and fruit on taste. This wine can age for years, but personally I like ?em young.

Exquisite parcels of Jonkershoek Valley fruit were separately vinified in open top fermenters. Towards the end of fermentation, the wine was racked into 100% new oak where it completed fermentation. After malolactic fermentation, individual components were classified and selected for inclusion into the 2007 Auction Reserve blend. 16 Months barrel maturation followed. Tasting Notes: Concentrated deep red colour. An already complex bouquet combines clean and rich blackcurrant, blackberry and a touch of vanilla oak. The amalgam of fruit flavours including plum, mulberry, redcurrant and blueberry is backed with just the right amount of clean oak. The different parcels for this blend were identified according to the site and clone attributes. Handpicked, optimum ripe berries were hand sorted and then lightly crushed. Extended skin contact for 14 days after fermentation ensured the tannin extraction and integration for a firm yet elegant mouth-feel. Malolactic fermentation in barrel followed. After another strict selection the wine matured in French oak barrels for 24 months without racking. Tasting Notes: Aromas of cassis, raspberry and a unique hint of minerality are complemented by a pleasant concentration and fruit length on the palate.

Paul Cluver Pinot Noir 2010

The grapes were selected from our highest lying Pinot Noir vineyards. They were harvested, cold soaked for 6 days with the fermentation starting naturally and then inoculated. Punched down 3 times per day. After fermentation only free run juice was transferred to barrel for malolactic fermentation. The wine was then left in barrel for 11 months before bottling. Tasting Notes: The texture is astounding – and where the power of this wine lies. The integration of oak adds to its finesse and aristocracy. Grapes are sourced from the mountain vineyards on De Rust Estate and are all new clones i.e. 667, 113, 115. The palate is a symphony of flavours, starting with cherries; the mid-palate is concentrated, with a distinct mineral character and a very long aftertaste. Serve with venison dishes or beef fillet.

The grapes were selected from the oldest Chardonnay vineyards on the property, 24 years. After pressing and settling the wines were transferred to barrel, fermented without inoculation. The wine was left on the gross lees for 9.5 months before racking, stabilisation and bottling. Tasting Notes: The first impression the wine gives is the expressive citrus characters on the nose. The palate is bursting with flavour, starting with lime notes carrying through to a concentrated mid palate with a very long lingering mineral aftertaste.

The grapes were hand picked at night. 100% barrel fermented and matured for 15 months in a second fill French oak barrel. This wine was fermented with a slow fermenting yeast strain to produce a certain amount of ‘volume’. No malolactic fermentation took place. Tasting Notes: Attractive stone-fruit aromas dominate the nose with hints of quince and pine nut. A rich, creamy palate is well balanced and freshened up by the presence of a lively acidity. This wine is full bodied and has a long finish.

Tasting Notes: This world-class wine has a vibrant deep red colour with an intense nose of ripe black cherries and bramble fruit, with underlying vanilla and cinnamon notes. The palate is well weighted and balanced, with elegant tannin to ensure a great maturation potential.

Rust en Vrede Cabernet Sauvignon 2009

The vineyard is north facing and consists of a mixture of decomposed Helderberg granite and Table Mountain sandstone, classified as a Tukulu soil type with medium growth potential. The grapes were harvested in 3 sections on 9 March and 20 March 2009 and these sections were vinified separately. Fermented in open top fermenters at 28 degrees C for 7 days, punched down 3-5 times per day and macerated for a further 14 days. Malolactic fermentation took place in barrel and the wines were matured for 19 months in 100% new French oak. Tasting Notes: An intense ruby coloured Cabernet Sauvignon with classical aromas of cassis and pencil shaving. A lovely combination of raspberry and blue berry fruits with inky savoury characters supported by the presence of subtle oak. Attractive layers of Christmas pudding, Blackforest cake, raspberry and cedar on the palate. The structure is packed with strikingly fine grained fruit tannins supported by a solid oak backbone – fine enough to enjoy but firm enough for long cellaring.

Saronsberg CWG Semillon 2008

The Semillon was hand harvested in the early morning, force cooled to 4 degrees C and then de-stemmed. The mash was allowed to cold soak for 12 hours and was then pressed. The free-run juice was settled, racked and then fermented in barrel at 16 – 18 degrees C until dry. The wine was left on its gross lees for 12 months, racked and returned to barrel and topped with Sauvignon Blanc. After a total of 20 months in a new French oak barrel, the wine was bottled and bottle aged for another 24 months prior to release. Tasting Notes: Subtle lanolin, litchi, delicate floral and lime flavours in combination with integrated oak are supported by a full-bodied and rich palate, structured mouth feel and a fresh finish. This wine is packed in wooden boxes.

Simonsig Cuv?e Ch?ne Blanc de Blancs 2007

Our premium Chardonnay block was harvested in mid-January and only the most gentle whole bunch pressed cuv?e was fermented in seasoned French oak. Three barrels were selected after extensive tastings and matured for 15 months. Bottling was followed by 48 months on the yeast before disgorging with very low dosage. Tasting Notes: Light golden colour with very fine bead making a crown against the rim. The nose is toasty with delicious roasted almond and brioche aromas. The zesty Chardonnay freshness is revealed by the delicate lemon cream character on the palate. Five years of evolution adds yeasty flavours in perfect harmony with the masculine oak influence. A rich and characterful bubbly to be enjoyed with fine food.

Simonsig Estate Heirloom Shiraz 2010

The first vineyard planted with the new SH470 clone on a low potential soil with lots of clay. Picked in two separate batches on 11 March and vinified separately. The first pick was not shrivelled and the second lot showed prominent shrivelling. The one lot spent 36 days and the other 13 days on skins. The best new Nevers barrel of each lot was selected and matured for 24 months before bottling in May 2012. Tasting Notes: A perfumed Shiraz showing succulent bramble berry fruit withlifted aromatic spices on the nose displaying fingerprint Rhone style personality. The core of berry fruit and herb flavours run persistently to the velvety finish. Delicious fruit intensity in a more restrained, elegant style.

Spier Merlot 2009

The grapes are picked from a vineyard planted on a north westerly slope, 120 metres above sea level. The grapes were harvested at full ripeness. Picked in 10kg lug boxes and pre-cooled to 8 degrees C prior to crushing. Hand sorting of the bunches was followed by de-stemming, berry sorting and then crushing. Fermentation was in open French oak fermenters. Malolactic fermentation took place in barrel, followed by 22 months barrel maturation before bottling. Tasting Notes: An intense, ruby coloured wine which shows inviting aromas of cherry, well-matured oak spice and hints of tobacco. The palate is beautifully structured and creamy in texture. Teddy Hall Wines Hendrik Biebouw Auction Reserve Chenin Blanc 2011

Early morning picking and berry selection – using only the free run juice. The juice was settled overnight in stainless steel. The clear juice with fluffy lees was racked off first thing the next morning, directly into French oak barriques -and left to start fermenting on its own. No commercial yeasts were used. After fermentation, the barriques were tightly sealed until just a few days before bottling. The oak was 50% new and 50% second fill. Bottling was on 22nd March after 12 months in oak. Tasting Notes: Bright gold with green tinge, tropical fruit, pineapple and a hint of vanilla on the nose. Quince, grapefruit and baked apple flavours follow on the palate. Underlining the wine?s pedigree is an intense finish which lingers long after the mouthful has been swallowed.

Tokara Auction Reserve Cabernet Sauvignon 2010

This wine is a blend of Cabernet Sauvignon wines from the two consistently best performing vineyards on Tokara. The grapes were hand-picked at optimal ripeness from the 22nd and 26th March at sugars of 25 and 26 degrees brix and acidities of 6.5 and 5.0g/l respectively. The grapes were placed in a cold store overnight and then de-stemmed and sent across a sorting table before being crushed directly into large wooden fermenters where natural fermentation occurred. The wine spent a total of twenty-two months in 67% new French oak. Tasting Notes: This wine displays a dark garnet colour and deep plum colour on the rim. The nose is that of dark cherry and black currant fruit with intense aromas of mocha, cedarwood and fennel bulb. The palate is full and rich with dark fruit and heady notes. The wine finishes with sweet fruit notes and is intensely long. This wine will start drinking well from 2015 and will mature well for another 10 years till 2025.

Waterford Estate 2009 Auction Reserve BB

Selected vineyard parcels were fermented in 2 000 litre stainless steel tanks. The blend was made post malolactic fermentation and aged for 26 months in MT French oak barrels, with a single egg white fining prior to bottling. Tasting Notes: The very distinctive Helderberg/Stellenbosch Cabernet Sauvignon character is enhanced by the purity of the Merlot fruit from this exceptional vintage. The mouthfeel and texture of the wine, with a classically dry finish, are the hallmarks of this blend. Enjoy with roast leg of lamb done with fresh rosemary, anchovies and garlic with oven baked potatoes and fresh veggies.
