Ataraxia Under The Gavel Chardonnay 2012
Sourced from a single south-facing vineyard on The Skyfields, home to Ataraxia in the Hemel-en-Aarde outside Hermanus. Intensely interventionist fruit selection was followed by an extremely non-interventionist winemaking approach. Fermented in small French tight-grain oak barriques, custom ordered from very specific Burgundian coopers, this wine was barrel aged for a further 10 months before being bottled. Tasting Notes: This wine is The Skyfields terroir in a bottle. It expresses the ancient soils and maritime influenced meso-climate of this specific vineyard. Reflecting the very best that both the New World and Old World styles have to offer, the wine is signatured by minerality, and effortlessly manages to be both subtle and intense on bouquet and palate. Complex, classy and pedigreed.

Beyerskloof Traildust Pinotage 2011
The grapes were hand-picked on 3 February 2011 from block A (bush vines) which is planted on the famous Bottelary gravel soils. On this specific block, we only left one grape bunch per shoot. The grapes came into the cellar at optimum ripeness, with the following analyses before fermentation: 26.6˚ balling; pH – 3.52; TA – 6.12 g/l; AS – 1.86 g/l. The juice stayed on the skins for 5 days at an average temperature of 25˚C. Punch downs were done every two hours during fermentation and the juice was separated from the skins at 4˚ balling. After malolactic fermentation, the CWG selected Pinotage went to 225 litre new French oak barrels for 21 months. Tasting Notes: Deep ruby red colour. Rich blackcurrant, dark cherries, prunes and cedar oak aromas. A big-structured Pinotage with intense dark fruit flavours. A wine with a complex middle and a long aftertaste. Great balance between fruit and oak will allow ageing in the bottle for 10 years and more.

Boekenhoutskloof Syrah Auction Reserve 2011
The grapes were harvested in the second week of February and chilled in a cold room overnight. Multiple hand selection, followed by de-stemming without crushing. The must was left to cold macerate for 4 days before alcoholic fermentation started naturally. Alcoholic fermentation took 14 days and the wine was left on the skins for a week before pressing into a second fill Saury barrique. One racking was done at 18 months, with the wine completing its 27 months of maturation in barrel; egg white fining and filtration before bottling. This wine shows the uniqueness of a well-drained, south-facing Wellington slope of decomposed granite. Minimal intervention and an artisanal approach in the cellar complement the character of this unique site. Tasting Notes: The nose offers complex notes of prunes, blueberry, dried herbs, vanilla, ground pepper and sweeter floral undertones. Massive fruit and earthy notes follow through onto the palate with a chalky finish.

Boplaas Cape Vintage Auction Reserve 2009
Only the finest Tinta Barocca, Touriga Nacional and Souzao are selected by the winemaker from specific low-yielding vineyards. All the fruit is hand harvested at optimum ripeness, fermented and fortified in small lagares, barrel matured in large seasoned oak barrels for 12 months to craft this distinctive full-bodied, complex and structured dry-styled Cape Vintage Auction Reserve. Tasting Notes: An inky black wine with hints of fiery garnet on the rim; while the bouquet slowly unfurls with ripe apricot, dried peach, a melange of mulling spices, fynbos, intense plum, black hedgerow fruits and hints of liquorice. Intense macerated black hedgerow fruits, sweet apricot, plum, vibrant allspice and cracked pepper combine with a lengthy finish with treacle, liquorice, fynbos and ‘meaty’ notes. The wine is still very primary, promising decades of enjoyment for those who can exercise patience.

Boplaas Ox Wagon 1880 Auction Reserve Potstill Brandy
Boplaas’ distilling heritage dates back to 1880, when current owner, Carel Nel’s great-great grandfather, Daniel Nel, exported his first consignment of fine Boplaas Brandy to England. In those days they transported the barrels of brandy by ox wagon to Worcester and from there to Cape Town by train and then by ship to London. Boplaas also became the first cellar to release an Estate Brandy in 1994 after the change in legislation in 1989. Our angel’s share is very high with the dry weather we have. The angels are very thirsty and every night they have a party in our brandy cellar, but this helps us produce rich brandies. Tasting Notes: Rich, golden colour. Lovely dried peach and vanilla flavours with a long, lingering finish.

Boschkloof Auction Reserve Syrah 2011
This Shiraz is made in a modern Rhone style. In 2010 my son Reenen returned from working in the Rhone with a lot of new ideas. The wine was harvested by hand, sorted and fermented naturally in 500 litre open top barrels. A small percentage of whole bunches were added. The wine had a long skin maturation of 25 days and only free run juice was used. Aged in second fill 225 litre French oak barrels for 19 months. Tasting Notes: This wine shows beautiful violets and perfumed spice. On the palate the wine is very elegant but still highly concentrated with a lot of depth. Some lovely freshness on the palate that will give the wine great aging potential. The wine has a very long finish. I believe this is a great Shiraz.

Bouchard Finlayson Auction Reserve Estate Chardonnay 2012
As much as we try to keep Pinot noir our flagship, Chardonnay appears to say ‘catch me’. Chardonnay has magic and seductive powers, wooing producers and consumers on all corners of the globe. This vintage presented superb quality fruit produced on high density plantings, picked at optimum ripeness and pressed whole bunch to release purity and length of palate. Matured sur lie for seven months in best Burgundian barrels. Tasting Notes: Aromatic layers of apricot and cantaloupe linger over creamy yeast and mild French oak wood tones, finally resonating a long citrus and quince finish. Maturation and longevity will reward and contribute added complexity.

Bruce Jack Happy Hour 2009
Mostly Sauvignon Blanc and Semillon with a touch of Viognier, the grapes all originate in the cool climates of Elim and Elgin. All barrel fermented and then aged in barrel for 10 months. This wine has been designed to live for at least 10 years from bottling. With white wines we strive for a combination of weight and freshness. Our white wines are known for their intense presence, persistence and longevity. Cape Point Vineyards Auction Reserve White 2012
The grapes for the wine were picked from the Semillon and Isliedh vineyards on the Noordhoek property, from extremely weak vines yielding only 3 tons/hectare. The grapes were whole bunch pressed in an oxidative manner and put to barrel (Sauvignon Blanc) and clay amphora (Semillon) without settling. Spontaneous fermentation took place in barrel and amphora where the wines spent 3 months on primary lees. Both wines were then racked and blended with the blend spending a further 10 months in old French Oak before being bottled without fining and filtration. Tasting Notes: Floral elements, stone fruit and citrus dominate the nose and palate. The wine is rich and textured with Semillon taking the lead, very youthful at this stage with the potential to age gracefully over the next 5 ? 10 years.

Cederberg Teen Die Hoog Shiraz 2011
The name ‘Teen die Hoog’ was given by the workers on the farm – not because they see this cold south easterly facing red slate hill as the highest vineyard in the country, but because they see it as the toughest pick of the season. The grapes were picked at great phenolic ripeness at the beginning of April. Cold maceration for four days followed by pump-overs every six hours. Malolactic fermentation in new French oak where it matured for 15 months. Unfiltered – a selection of the three best barrels. Tasting Notes: Intense Shiraz fruit with lots of red berries and mulberries. A combination of wild herbs, violets and white pepper aroma; distinctive of the high lying red slate vineyards. A firm structure with sweet spice and roasted coffee bean flavours that linger on the palate. A wine to mature and develop superbly over the next four to eight years.

De Grendel Op Die Berg Pinot Noir 2011
The fruit was picked from the Witzenberg region. Destalked, 4 days cold maceration followed by alcoholic fermentation and basket-press. Transferred into new barrels for malolactic fermentation. Transferred into second and third fill barrels for maturation, followed by filtration and bottling. Tasting Notes: The pure expression of Pinot Noir with a combination of flavours of black and red fruit. Slight fynbos spiciness supported by oak and natural acidity.

Edgebaston Cabernet Sauvignon Reserve 2011
Grapes from a single clone making up 8 rows of one of our Cabernet Sauvignon blocks were vinified separately in a 2 ton open fermenter. Pigeage took place three times daily and the wine was pressed off to barrel to complete fermentation and malolactic fermentation in new French oak. Maturation in oak took 18 months. Tasting Notes: The dark centre of this Cabernet Sauvignon shows the concentration of colour extracted from the small berries during punch-down. Dark cocoa, cinnamon and blackberry notes on the nose carry to the palate where the structure and depth of flavour is evident. Ripe boysenberry, blackberry and a touch of vanilla spice continue onto a long balanced aftertaste. This wine will benefit from and reward maturation and decanting before serving.

Ernie Els CWG 2011
The grapes were hand-picked in the cool early morning, gently destalked with a Bucher de-stalker and lightly crushed. On the sorting table, excess stalks and rotten berries were removed by hand. Fermentation took place in small, 300 litre open top oak barrels with WE 372 yeast. The fermenting grapes were punched down manually 5 times a day for maximum colour extraction. After fermentation, maceration was 14 days before pressing. Each variety was separately vinified and blended after the 18 months of maturation. Tasting Notes: The 2011 dances in the glass with a bright purple-sheen and dense crimson body. Further complexity of graphite, salami and bacon notes balance an intense floral lift, whilst whiffs of mint and chocolate drift through to a supple, layered palate. A lacy, sweet- fruited, cassis-cocktail stuns the palate, wrapped up with rich, etched tannins on the finish.

Graham Beck Wines Non Plus Ultra Cap Classique 2008
The Chardonnay and Pinot Noir were whole bunch pressed and only the cuvee fraction used. A small portion of Chardonnay was fermented in Piece Champenoise barrel to promote the creamy texture and complexity. The Pinot Noir adds palate weight and length of flavour. The wine was matured for 50 months on the lees prior to disgorgement. Tasting Notes: Gentle mineral notes with fresh lime and ripe citrus on the nose. Rich raspberry notes burst on the palate with a creamy and gentle mousse, ensuring richness and finesse.

Graham Beck Wines The Catalyst 2010
The grapes Syrah and Viognier were picked at absolute phenolic ripeness, jointly destalked and then cool soaked for three days at 12 degrees C. Co-fermented by natural yeast with an extended skin contact time of 12 days. The grapes were then pressed and taken to barrel for malolactic fermentation and barrel aging. Tasting Notes: Great primary fruit with black cherries and floral character. Great perfume notes with nice integration between the fruit and the wood.

Grangehurst Auction Reserve 2007
The grapes were harvested and sorted by hand, fermented in open tanks, basket pressed and matured in French oak barrels for 28 months. Tasting Notes: Dark ruby with slight garnet edge. A blend of three Bordeaux varietals expressing elegance and a fine structure typical of the cool 2007 vintage; black berries, some mint, liquorice and subtle oak – a wine that should continue to develop and improve for at least 10 years from vintage.

Groot Constantia Auction Reserve Shiraz 2010
Grapes were hand-picked at 25.2 degrees balling and fermented in open 500 litre French oak barrels, with punch-downs every 4 hours. At 5 degrees balling, the wine was transferred to a stainless steel tank to finish fermentation. Extended skin maceration was allowed for 30 days after fermentation before pressing. The wine was matured for 12 months in 100% French oak barrels, 30% first fill, 43% second fill, 17% third fill and 10% fourth fill barrels. To preserve the fine quality and complexity, this wine was subjected to minimum stabilisation and filtration. Tasting Notes: This is a classic, well-balanced Shiraz with a deep red, ruby colour. The wine shows dominant fruit – blueberries, plums, dark cherries and blackcurrant; balanced by delicate spice, white pepper, cedar wood and oak flavours. The spice and fruit that follow through on the palate combine with soft tannins to give a long, lingering aftertaste.

This wine was matured in 80% new and 20% second-fill French oak and spent 20 months in barrel. The balance of this wine was used as the basis for our Mackenzie red blend. Tasting Notes: Inky black in colour, perfumed violets, cherry and spice on the bouquet. The palate is dense and full bodied, showing vanillin oak and spicy flavours.

The wine is a blend of one barrel of Gravel Hill and two barrels of Stork Shiraz. 80% new wood, all French, 21 months in barrel. Tasting Notes: Deep, black-red in colour. Black and red fruits show on the palate. Perfumed notes with treacle aromas are also present. The palate is velvety, has juicy fruit and is elegant.

Haskell Vineyards Merlot 2010
Made from a 12 year old vineyard that takes a lot of stress in the season. Clever nurturing of the vines over the past couple of years has rewarded us with high quality fruit. The grapes were picked at phenolic ripeness. Fermented at 28 degrees C with pump-overs four times per day. After pressing, malolactic fermentation and maturing in 100% new oak for 16 months before bottling. Tasting Notes: Lovely flavours of cranberries, mulberries and pomegranates. The palate has firm, tight, powdery fruit tannins which balance well with the fruit flavours from the nose and the acidity. The aftertaste is lingering with dark chocolate. Good balance from nose right through to aftertaste.

All grapes were hand harvested and sorted in cellar before fermentation. 4-5 pump-overs a day with delestage on Merlot at 12 degrees balling. Average maceration on the skins for up to 15 days. This is a special selection from exceptional new barrels in the cellar and bottled to sell at the Guild Auction. Tasting Notes: Vibrant ruby colour, fresh dark fruity nose – plums, black cherries and cassis. Underlying flavour of dark chocolate. Palate very smooth and more-ish. Fruit well balanced with subtle wood flavour, ending lovely and dry.

After many years of experimenting with different coopers, grains, toasting levels, barrel sizes, ages of barrels, time in barrels and different winemaking techniques and terroir, I’ve found the ‘sweet spot’. Good integration between fruit and wood comes with time, but too much time can also result in ‘oak juice’. This wine was bottled after 13 months in a big barrel with regular rolling and no stirring. The reward has been great this year, and with our Vloekskoot, we invite you to celebrate an exceptional harvest and the outstanding quality we have achieved. Tasting Notes: A true reflection of Sunday’s Glenn terroir, with nuances of Granny Smith apple from the small portion of Nouvelle, the oily, lanolin texture of Semillon and a bowl full of ripe Sauvignon Blanc fruit, harmoniously finished off with well integrated oak.

John Loubser Thirteen 2011
The Sauvignon Blanc and Semillon are both new plantings that come off block 13A and 13B at Steenberg Vineyards respectively – they were harvested on the same day at 23.5 degrees balling and co-fermented in one large 500 litre third fill barrel (in a cold room). After 10 months of maturation, the wine was naturally fined and cold stabilised in the barrel and then bottled. Tasting Notes: Typical minerality derived from decomposed granite – complex tropical fruit supported by subtle oak nuances – perfect balance between structure and texture.

Jordan Chardonnay Auction Reserve 2012
Specially selected for the CWG Auction, this reserve Chardonnay is traditionally made using natural, wild yeast from the acclaimed Nine Yards Chardonnay vineyard. Intensely concentrated lemon-lime flavours and slow fermentation in 228 litre Burgundian oak barrels for twelve months has resulted in a classic style with a new world twist. Quartzite veins through the 600 million year old granite sub-strata provide the backbone for the minerally flavours. Regular barrel rolling accentuates the rich, leesy character in this elegantly expressive wine. Tasting Notes: An iconic Chardonnay with intense, minerally, lemon-lime flavours and hints of butterscotch and vanilla. The full, rich mouth-feel and balanced oak integrates superbly with the tropical fruit finish.

Jordan Sophia 2010
A blend of the best ‘Cobblers Hill’ barrels and a reserve Cabernet Sauvignon, this wine has been named ‘Sophia’ after the legendary mother of Faith, Hope and Charity. Representing the characteristics of the three Bordeaux varieties that make up this exceptional wine, the Cabernet Sauvignon, Cabernet Franc and Merlot grapes were harvested from the best hillside vineyards at Jordan. The wine spent a total of 26 months in 225 litre French oak barrels to integrate the rich tannins and add complexity. Tasting Notes: Complex, dark chocolate, black cherry and cassis intertwine with rich blackberry fruit and hints of vanilla and spice from the integrated French oak. Densely layered ripe tannins add to the opulent finish. Well-structured, this wine will reward careful cellaring for many years to come.

Grapes from 26 year old vineyards were picked at 25 degrees balling. In the cellar, the grapes were de-stemmed, sorted and crushed into open top fermenters. The skins were punched down every 2 hours for 5 days. After malolactic fermentation, the blend was made and the wine went to 100% new French oak barrels for 24 months. Tasting Notes: Blackcurrant and spices dominate the nose with aromas carrying through to the palate. The palate has a freshness that ends in a dry, appetizing finish.

Kleine Zalze 3 Expressions 2010
Each pocket of fruit, selected according to three different soils, was handled and harvested separately. The grapes from the soil with a higher percentage of clay were traditionally punched down and the balance from the soil with the most sand-lime percentage was pumped over. After 26 months in 100% new French oak, the barrels that delivered the best fruit expression of the terroir were selected. Tasting Notes: Piles of blackcurrant, spicy and wild-berry fruit on the nose and palate. A wine with savoury, well integrated fruit and wood tannin, with an alluring combination of elegant plummy fruit flavours.

Miles Mossop Wines Maximilian 2011
This is an expression of the Cabernet Sauvignon block used as a basis for my Max blend. The grapes were picked at optimal ripeness and cooled down to around 5 degrees C. After bunch selection, de-stemming and berry selection, the grapes were crushed into 2 ton wooden upright fermenters and cold soaked until fermentation started spontaneously. Fermentation took 14 days, with punch-downs twice a day. Maceration on the skins for 22 days before the wine was run off and the pomace pressed. Malolactic fermentation in barrel. Three 225 litre barrels were selected – one new, one second fill and one third fill. 22 months in barrel, a light egg white fining, after which the wine was bottled unfiltered. Tasting Notes: Inky, dark plum-red colour. Intense aromas of red and black berry fruit with underlying notes of five spice and Christmas cake. The wine is full and rich when it enters the palate with dark rich flavours of black cherries, cassis and black olives. There is a certain saltiness to the wine on the finish, with chewy yet elegant tannins.

Exquisite parcels of Cabernet Sauvignon and Shiraz were fermented separately in stainless steel fermenters. A series of pump overs and punch downs were employed to manage extraction. Further maceration followed before racking to barrel for malolactic fermentation. This wine spent 18 months in new French oak. Tasting Notes: Deep and generous red colour with a dark core. The aromatics reveal red and black fruits with fresh liquorice and black olive notes. The palate is seamless, sophisticated and stylish. Structure and texture weave into a tightly focussed, poised, multi-dimensional continuum. Fine and persistent shaley tannins conspire with bright acidity.

Neil Ellis Auction Reserve Pinotage 2011
This wine has been produced using a selection from high altitude cooler climate Jonkershoek vineyards. The major winemaking objective is to craft a wine that is both complex while young, yet has the capacity to evolve and mature admirably. Cold soaked for 4 days prior to natural fermentation, using 25% whole bunches with no pressings included. The wine remained on gross lees for 9 months without SO2 in 50% new and 50% seasoned 500 litre French oak barrels. The total time in barrel was 16 months. Tasting Notes: Dark crimson, suggestively varietal, brooding fruits of sweet glac?ed fruit. Scents of dark cherry are released. Plush, well-rounded and balanced, sweet red-currant and cherry fruits. After selecting a particularly interesting block prior to harvest, the grapes were sampled regularly in order to pick at optimal ripeness. Tasting Notes: Complex upfront aromatics displaying tropical citrus and green crispness. Apple tones give way to exciting spice. Durbanville minerality is ever present. Paul Cluver CWG Pinot Noir 2011
The grapes were selected from our highest lying Pinot noir vineyards in the mountain vineyards on De Rust Estate and are all new clones i.e. 667,113,115. The grapes were harvested, cold soaked for 6 days with the fermentation starting naturally and then inoculated. Punched down three times a day. After fermentation, only free run juice was transferred to barrel for malolactic fermentation. The wine was then left in barrel for 11 months before bottling. Tasting Notes: “Understated” – the colour is gentle and alluring, the nose reticent but intriguing. Initially cherries and plums, combined with sweet cherry blossom fragrances. Underlying are whiffs of raw meat, wet, warm earth and hints of wild mushroom and pepper. The texture is where the power of this wine lies and the integration of oak adds to its finesse. The palate is a symphony of flavours, starting with cherries; the mid-palate is concentrated with a distinct mineral character and a very long after taste.

Hand-picked in the cool of the night to retain freshness and flavours. 48 hours cold maceration (10 degrees C) prior to fermentation. 20% of the grapes were not crushed and destemmed and were left to ferment beneath the crushed grapes. Extraction was done by doing a combination of pump-overs and pigeage three times per day. Malolactic fermentation took place in barrels. Matured for 22 months in a new 300 litre French oak barrel. Tasting Notes: The wine has an exceptional vibrant red colour. A complex nose of black and white pepper spices with liquorice, bramble and black fruit undertones. Well-structured, elegant tannins support a multi-layered, creamy palate and ensure great harmony and balance.

Rust en Vrede CWG Estate 2010
The black Southeaster in November 2009 reduced the 2010 crop by 40%. The smaller Merlot crop ripened from late February, until end of March for the Petit Verdot. The components of the blend were vinified and matured separately. The grapes were fully destemmed and sorted. During fermentation, in open fermenters (tanks and barrels), the cap was punched down manually three to five times per day. Post fermentation maceration for 7-25 days, followed by 18 month maturation in 300 litre barrels. Bottled on 14 November 2011. Tasting Notes: This fruit driven wine shows cassis and raspberry aromas intertwined with dark chocolate and cedar notes, backed by a touch of cumin spiciness. The ripe cassis and dark chocolate follows through onto the mouth-filling palate. The lengthy finish is well balanced with the sweetness of the fruit and the dryness of the tannins.

Harvested by hand, pressed whole-bunch and fermented in a 500-litre French oak barrel with wild yeast. The wine was left on its lees for 10 months, racked and kept in barrel for 14 months. Second-fill oak was used so as not to mask the delicate perfume and fragrance of Viognier. Tasting Notes: Delicate yellow fruit flavours, white peach, subtle spice notes and an understated perfume shows Viognier at its best. The palate shows balanced oak, a full- bodied creaminess and pure fruit expression which captures Saronsberg’s aspiration to showcase Viognier?s elegance and finesse as expressed through wild fermentation and gentle oak use.

Saronsberg Die Erf Shiraz 2011
The grapes were hand picked, bunch sorted, de-stemmed and berry sorted on vibration tables. A portion was fermented whole bunch. The mash was left in the fermenter for a 5-day cold soak. Mainly punch downs were used to extract colour and flavour from the skins. After fermentation and extended maceration, the total time on skins was 28 days. The wine was pressed into 100% new French Allier oak barrels where it completed malolactic fermentation. The 12% Grenache was fermented whole bunch. After 12 months the two components were blended together and left in the barrel for a total of 22 months. The wine was bottled unfiltered. Tasting Notes: A fragrant melange of dark fruit, delicate berry and subtle violet flavours with gentle spice aromas that complement on the nose. The palate is silky and full-bodied, packed with concentrated, ripe fruit flavours showing great length and weight.

Simonsig ?The Russety One? Roussanne 2012
The grapes were hand-picked and cooled overnight before being crushed directly into the press. Wild yeast fermented in 5 year old Allier medium toast barrique. The wine spent 13 months in wood before bottling in April 2013. Tasting Notes: Roussanne is subtle and restrained in its youth, but with a great reputation for long ageing. The citrus blossom and lemongrass aromas are given further impact by a zesty limestone minerality. The palate is full-bodied with a silky, viscous texture and a bright, natural acidity. Delicious floral, apricot and hints of honey linger on the palate of this hand-crafted wine.

Simonsig Heirloom Shiraz 2011
Harvested at 26? balling and left on the skins for 26 days for perfect extraction of colour, fruit and condensing of the tannins. Straight into new barrels for malolactic fermentation and a few barrel to barrel rackings. The one barrel was Allier medium toast seasoned for 24 months and the second was Nevers seasoned for 36 months. Bottled after 19 months. Tasting Notes: Dark Persian carpet red with youthful crimson rim. Delicious sweet brambleberry and black cherry fruit with a touch of earthy dried fynbos aromas. Densely packed liquorice and cloves embellish the fruit on the palate. The velvety tannins are in total harmony with the oak and fruit to leave a lingering complex finish.

Spier Auction Reserve Frans K Smit 2010
This wine was fermented in 400 litre roller barrels and a 1000 litre open top fermenter, followed by 24 months barrel maturation. A light egg white fining rounded off the tannin structure. Tasting Notes: Dark-edged, this wine shows prominent ripe blackcurrant on the nose with hints of cassis and spicy undertones. It is full-bodied with layers of fruit and spice and a well-integrated tannin structure.

Teddy Hall Maria van Swaanswijk Auction Reserve Chardonnay 2012
Chardonnay grapes sourced from vineyards between Stellenbosch and Somerset West were hand-picked, crushed and pressed. The juice was put into French oak barrels and allowed to undergo 100% natural fermentation. Tasting Notes: Citrus and cedar notes on nose, lemon and lime on the palate, with pinpoint acidity balancing this elegant but persistent Chardonnay.

The Drift We’re Here 2011
This is the first red wine under The Drift label, which is the name of our farm in the Overberg Highlands. It is the realisation of a long, often wine-fuelled, sometimes heartbreaking, but always meaningful journey. Not all the grapes came from the farm, and I made it at Flagstone with Gerhard Swart’s help, but this is the essence of what this journey stands for. It will be the compass for the style and philosophy of the The Drift Farm wine. It is a wonderful wine, with the potential to live for decades. Grown and crafted with absolute care and attention to detail, it proudly puts Pinotage in the forefront. Named “We’re Here” after the schooner in Rudyard Kipling’s coming-of-age-story “Captains Courageous”. Read to my father by his dad, and to me by my father; it has now been handed on to my boys. It’s about the real value of money and hard work. Tasting Notes: Deep, dark ruby centre leading to a ruby red rim. Plums and red berries dominate the nose with spicy notes and a hint of mint.

Tokara Tribute 2012
The grapes originate from four adjacent vineyards on the upper southern slopes of the Simonsberg mountain, between 350 to 530 metres above sea level. The Semillon was picked on the 10th February while the 3 different blocks of Sauvignon Blanc were picked late February/early March. Only free run juice was used. The Sauvignon Blanc fermented in 500 litre light toast barrels (approximately 30% new) while the Semillon fermented in 225 litre medium toast barriques (50% being new). The wine was blended in November and returned to barrel for further maturation. Bottled in February 2013. Tasting Notes: The wine has a stunning nose of honeydew melon, passionfruit and lemon- grass. There are hints of white flowers, toasted brioche and marzipan. The entry on the palate is full and rich with stunning clarity of fruit and weight, with a clean middle palate and a long textured finish of toasted almonds and pine nuts. The concentration and acidity of this wine will ensure that it ages well for a further 10 years.

Villiera Meteor Cap Classique 2008
A selection of perfectly healthy, early picked fruit was whole bunch pressed in a pneumatic bag press. Only the cuvee (500 litres/ton) was settled and naturally fermented. The final cuvee is comprised of all 3 Champagne varieties; Chardonnay, Pinot Noir, Pinot Meunier. The blend is dominated by Chardonnay to improve maturation potential and a portion was fermented in used barrels for extra complexity. The red grapes add body, roundness, and flavour. After stabilisation and addition of liqueur de tirage, the wine was bottled for second fermentation. After 5 years on the lees, this sparkling wine was riddled and disgorged. A small addition of dosage has ensured great balance. Tasting Notes: Rich, biscuity and slightly spicy on the nose with a hint of berry fruit and roasted almonds on the palate, developing finesse and complexity on the aftertaste. Powerful and bracing to drink now but will develop more intensity and harmony with another year or two in the bottle.

Vriesenhof Cabernet Sauvignon 2007
Pre-ferment cold maceration for 24 hours before inoculation in stainless steel tanks. Both alcoholic and malolactic fermentation was completed in tank. Wine was racked to first and second fill French oak barrels (225 litres) for maturation. After 12 months, the wine was racked and returned to third fill barrels for another 12 months of aging before the wine was racked to a 500 litre barrel for another 20 months. The period of maturation in the 500 litre barrel was intended for integration of aromas and softening of tannins. Tasting Notes: Beautiful aromas of red fruit, leather and spice on the nose with fresh cherries and raspberry on the palate.

Vriesenhof Pinot Noir Bin 115 2008
Harvested during the last days of January 2008. Vinification took place in open fermenters, together with a small portion of pump-overs. The wine went into heavier roasted barrels for completion of alcoholic as well as malolactic fermentation. Tasting Notes: A wine showing a deeper colour with earthiness and forest floor aromas. The heavier roasting highlights the structure of the wine. It needs time to evolve.

Selected vineyard parcels fermented in 2000 litre stainless steel tanks. The blend was made post malolactic fermentation and aged for 26 months in medium toast French oak. Tasting Notes: Aromas of cassis and pencil shavings characterise the aroma of this blend. On the palate there are firm, well-integrated tannins that are polished to perfection – leaving you with a long and classically-dry finish.

Waterford Estate Chardonnay Auction Reserve 2011
Fruit selected from within a single vineyard underwent natural alcoholic fermentation in 500 litre Burgundy barrels. Malolactic fermentation was prohibited and the wine was allowed to age on the gross lees for 12 months. Tasting Notes: Vibrant aromatics of citrus blossoms, lime cordial and a touch of roasted almond from the oak. The palate is elegantly rich and well structured, a slight oiliness on the finish, relating to the intensity of the 2011 vintage. The wine is still youthful and will only settle into its best in 5 to 8 years.
