Ataraxia Under The Gavel Chardonnay 2013

Made from grapes sourced from a single south-facing vineyard on The Skyfields, home to Ataraxia in the Hemel-en-Aarde outside Hermanus. Intensely interventionist fruit selection was followed by an extremely non-interventionist winemaking approach. Fermented in small, tight grain French oak barriques, custom ordered from very specific Burgundian coopers, it was barrel aged for a further 9 months before being bottled. Tasting Notes: This wine is The Skyfields terroir in a bottle! It expresses the ancient soils and maritime influenced meso-climate of this specific vineyard. Reflecting the very best of New Word and Old World styles, the wine is signatured by minerality and effortlessly manages to be both subtle and intense. A complex, classy and pedigreed Chardonnay.

Bartho Eksteen Sluitsteen Shiraz 2012

Sluitsteen (cornerstone) is Bartho’s crown jewel and an inspiration to every student at his Wine Academy for young winemakers. It is here where dedication, respect, passion, skill and confidence are captured with great love into the next generation of winemakers. Tasting Notes: Eckstein (German) – sluitsteen or hoeksteen means cornerstone. Besides its biblical context, an “eksteen” is the central focal point of any foundation and determines the position of the entire structure. A solid, medium to full bodied wine with perfect wood and fruit integration: currants; cacao beans; rich, round black stone fruit, particularly plums, nutmeg and smoke. This wine is packed in wooden boxes.

Bartho Eksteen Vloekskoot Sauvignon Blanc 2013

The ability to read a vintage, years of research and trials to find the perfect combination between terroir and origin, grain and toasting levels of the right wood, age and sizes of barrels, cooper’s workmanship and winemaking techniques has resulted in a work of art which I’m proud to put my name to. Tasting Notes: Typical Bo-Hemel en Aarde terroir expression. Scrunched up fynbos herbs, and slices of ripe pear. Delicious fruit and perfectly well integrated oak. Full palate, harmonious and seamless from start to the long ending. If you can put away some bottles for a couple of years, you can delay the pleasure and have it back with interest for anything up to 6 years after harvest. Serve with Chevre and green olive-stuffed guinea fowl breast with sauce Albufera.

Beyerskloof Traildust Pinotage 2012

Grapes were handpicked in February 2012 from block A (bush vines) which is planted on the famous Bottelary gravel soils. The grapes came into the cellar at optimum ripeness, with the following analyses before fermentation: 26.6 degrees B; pH – 3.52; TA – 6.12 g/l; AS – 1.86 g/l. The juice stayed on the skins for 5 days at an average temperature of 27 degrees C. Punch downs were done every 2 hours during fermentation and the juice was separated from the skins at 0.6 degrees balling. After malolactic fermentation the CWG selected Pinotage went to 225 litre new French oak barrels for 21 months. Tasting Notes: Deep, dark red colour. Rich blackcurrant, dark cherries, prunes and cedar oak aromas. A big-structured Pinotage with intense dark fruit flavours. A complex middle leads to a smooth and pleasant finish. Great balance between fruit and oak will allow this Pinotage to age in the bottle for 10 years and more.

Boekenhoutskloof Syrah Auction Reserve 2012

Cold soaked for 5 days. Wild fermentation. Four weeks on the skins. Spontaneous malolactic fermentation in barrique. 27 months in second fill Saury barrique. One racking at 18 months. Tasting Notes: The nose is laced with copious amounts of blueberry, white pepper and meaty undertones which follow through onto the palate.

Boplaas Ouma Cloete Straw Wine 2013

All the raisined bunches were hand harvested in the early morning hours. The bunches were then hand sorted and cold soaked for two days in open fermenters (lagars) prior to pressing. Fermentation in temperature controlled stainless steel tanks and maturation sur lie for three months prior to bottling. Tasting Notes: This rich, golden-coloured natural sweet dessert wine brims with exotic fruits, dried apricot, peach and melon with honeyed top notes.

Boschkloof Syrah 2012

The grapes were harvested by hand, destemmed and fermented in 500 litre open lid French oak barrels. The wine underwent natural fermentation and nothing was added. Tasting Notes: Deep, dark concentrated colour. Lots of beautiful white pepper spices and violet flavours on the bouquet. Great mid-palate with layers of Shiraz fruit. This is a big wine that shows a lot of elegance with lovely soft tannins and a lingering aftertaste.

Bouchard Finlayson Auction Reserve Estate Chardonnay 2012

As much as we try to keep Pinot Noir our flagship, Chardonnay appears to say ‘catch me’. Chardonnay has magic and seductive powers wooing producers and consumers from all corners of the globe. This vintage presented superb quality fruit produced on high density plantings, picked at optimum ripeness and pressed whole bunch to release purity and length of palate. Matured sur lie for seven months in best French barrels. Tasting Notes: Aromatic layers of apricot and cantaloupe linger over creamy yeast and mild French oak wood tones, finally resonating with a long citrus and quince finish. Maturation and longevity will reward and contribute added complexity.

Bouchard Finlayson Auction Reserve Pinot Noir 2012

Vintage 2012 was unusual in that both quality and quantity presented above average offerings. In fact, the Pinot Noir fruit was outstanding. Our high density plantings also contributed towards enhancing flavour profile and creating greater depth of tannin and colour. This is the first Hemel-en-Aarde Valley Pinot Noir presented under the CWG label. Tasting Notes: The core of plush vibrant fruit and tannins encompass spicy, well centred, dark forest-berry flavours. A 100% contribution of best new French oak further adds to complexity and offers confirmed aging potential.

Cape Chamonix CWG Reserve Chardonnay 2013

The grapes were de-stemmed, soft crushed and the must macerated with skins for 8 hours. Spontaneous fermentation took place in traditional 228 litre barriques. The wine was matured for 14 months and underwent malolactic fermentation. 10% of the blend was matured in concrete eggs. Tasting Notes: It has a bright straw colour with golden highlights and exquisite aroma, with scents reminiscent of tropical fruit, ginger, spice and oatmeal. Well-structured and minerally, with flavours of lime and toasted almonds on the palate. This wine is packed in wooden boxes.

Cape Point Vineyards CWG Reserve White 2013

The grapes for the Reserve White were picked from the Isliedh and Semillon Vineyards on the Cape Point Vineyards property, from extremely weak vines yielding only 3 tons per hectare. The fruit was whole bunch pressed in an oxidative manner and put to barrel without settling. Spontaneous fermentation took place in older 600 litre barrels with the blend compiled directly after ferment. The wine then spent 15 months in barrel with regular battonage before being bottled in June 2014. Tasting Notes: Classic Cape Peninsula maritime freshness and minerality form the backbone of the blend. Citrus, floral elements, spice and lanolin come together on the nose and palate to complement a long, textured finish.

Cederberg Ghost Corner Semillon 2013

Vinification: A reductive style. Cold crushed at 8 degrees C with skin contact for 8 hours. Only free run juice was used and then settled for 2 days at 10 degrees C. 50% fermentation took place in stainless steel and 50% was fermented in a first fill oak barrel for 4 months. Weekly battonage in both barrel and stainless steel. Tasting Notes: Maritime influences combined with grey slate and koffieklip soil types give rise to an aromatic Semillon showing elderberry flower and dusty dry fynbos on the nose. Careful oaking results in a full, lingering, creamy palate with a crisp finish. A wine showing phenomenal potential to cellar for another 3 to 6 years.

Cederberg Teen Die Hoog Shiraz 2012

Vinification: Cold maceration took place for 4 days in closed tanks. Fermentation happened at 25-28 degrees C with pump overs every 6 hours – thereafter 20 days extended skin contact. The latter was followed by malolactic fermentation in new 225 litre French oak Allier barrels and left to mature for 15 months. The three best barrels were selected for this wine. Tasting Notes: The 2012 is a proud young sibling of the world’s number one Shiraz as selected by the international Syrah du Monde 2014. From these vines an intense Shiraz is produced – a powerful wine, yet elegant on the palate with layers of black cherries and mulberries, hints of white pepper and violets on the nose. Juicy ripe tannins and beautifully balanced oak. ‘Teen Die Hoog’ Shiraz has been carefully crafted to mature and develop further in the bottle for another 4 to 8 years.

The growing conditions of these grapes are continental – they come from high altitude vineyards, 950 metres above sea level. Great complexity supported by oak, with flavours of asparagus and gooseberry, balanced by a firm acidity.

A single, new oak barrel selected from Merlot from our Mont Fleur vineyard 400 metres above sea level. This wine spent its second year in a second fill barrel. Tasting Notes: Rich, lively, true red colour. Fruitcake, blackberry and plum nose envelops a fine cedary oak and chalky, charcoal component. Firm, dusty tannins carry the rich fruit nicely on the palate.

De Trafford Perspective 2012

The best Cabernet Franc, Merlot and Cabernet Sauvignon new oak barrels selected from our Mont Fleur vineyard 400 metres above sea level. After 1 year the selected barrels were blended in a second fill 700 litre oak barrel and matured for another 9 months. Tasting Notes: Plummy Merlot character shows at first on the nose, followed by a creamy red berry and dusty-cherry character. This echoes on the palate with ripe berry fruit followed by spicy cherry flavours and elegant, dry, soft tannins and a long finish.

Ernie Els CWG 2012

The grapes were hand-picked in the cool of early morning. Grape bunches were gently destalked and lightly crushed. On the sorting table, all excess stalks and rotten berries were carefully removed by hand. Fermentation took place in small 300 litre open top oak barrels with yeast WE 372 being added to the juice. The wines were punched down manually 5 times per day ensuring maximum colour extraction from the skins. Each variety was separately vinified and blended after 18 months of maturation. Tasting Notes: The nose abounds with dark-blue fruits, a hint of bacon and espresso. Classy oak notes and a touch of truffle further tussle with the amazing fruit purity. The palate shows beguiling inky-black cassis from the Cabernet Sauvignon, providing fleshy tannins and towering structure. The large Shiraz component adds a spicy complexity and exotic edge, whilst the sprinkle of Merlot gives finesse and depth. This wine is packed in wooden boxes.

Groot Constantia Auction Reserve Shiraz 2011

Shiraz grapes were handpicked, fermented in open 500 litre French barrels and transferred to a stainless steel tank to finish fermentation. Extended skin maceration for 30 days. The wine was matured for 12 months in 100% French oak barrels (30% first fill). Minimum stabilisation and filtration was done to preserve the quality and complexity. Jordan Chardonnay Auction Reserve 2013

Specially selected for the CWG Auction, this reserve Chardonnay is traditionally made using natural, wild yeast from the acclaimed Nine Yards Chardonnay vineyard. Intensely concentrated lemon-lime flavours and slow fermentation in 228 litre Burgundian oak barrels for twelve months has resulted in a classic style with a new world twist. Quartzite veins through the 600 million year old granite sub-strata provide the backbone for the mineral flavours. Regular barrel rolling accentuates the rich, leesy character in this elegantly expressive wine. Tasting Notes: An iconic Chardonnay with intense, mineral, lemon-lime flavours and hints of butterscotch and vanilla. The full, rich mouth-feel and balanced oak integrate superbly with the tropical fruit finish. This wine is packed in wooden boxes.

Jordan Sophia 2011

A blend of the best ‘Cobblers Hill’ barrels and a reserve Cabernet Sauvignon, this wine has been named ‘Sophia’ after the legendary mother of Faith, Hope and Charity. Representing the characteristics of the three Bordeaux varieties that make up this exceptional wine, the Cabernet Sauvignon, Cabernet Franc and Merlot grapes were harvested from the best hillside vineyards at Jordan, which overlook Table Mountain and False Bay. Fermented at 28 degrees C with three pump-overs daily, over the fermenting cap. After pressing, the wine was racked to barrel where it completed malolactic fermentation. The wine spent a total of 26 months in 225 litre French oak barrels to integrate the rich tannins and add complexity. Tasting Notes: Complex, dark chocolate, black cherry and cassis intertwine with rich blackberry fruit and hints of vanilla and spice from the integrated French oak. Densely layered ripe tannins add to the opulent finish. Well-structured, this wine will reward careful cellaring for many years to come. This wine is packed in wooden boxes.

Kaapzicht CWG 1947 Chenin Blanc 2013

The grapes were hand-picked, whole bunch pressed, settled overnight and underwent natural fermentation in French and Hungarian oak barrels. The wine spent one year in different barrels (500 litre, 300 litre and 225 litre), ranging from new to third fill, and then a barrel selection was made to produce the final blend. Tasting Notes: Lime, white peach, yellow apple, earth, some yeasty complexity. Weightless intensity and all of a piece. Oxidative in style but perfectly done – the result is a vague, sherry-like quality that suits the wine.

The cultivars were vinified separately in red wine fermenters. Pump overs were done 3 times a day. Matured in French oak for 24 months before being blended together. Tasting Notes: Dense, plum-coloured with a brick red rim. The nose shows subtle berries with prominent red cherry fruit and a hint of fragrant violet. The palate is in complete harmony with softly-rounded dark berry fruit, fleshy and full in body. Well integrated oak has lent some attractive cigar box touches and helped tannins to softness and approachability.

Grapes from 26 year old vineyards were picked at 24.5 degrees balling. At the cellar the grapes were destemmed, sorted and crushed into open top fermenters. The skins were punched down every 2 hours for 6 days. After malolactic fermentation the blend was made and the wine went to 100% new French oak barrels for 24 months. Tasting Notes: Black fruit, cedar and spices are prominent on the nose, with a palate that is rich and complex. The wine has a beautiful balance with a long finish that leaves you appetized for more.

Kanonkop CWG Pinotage 2008

20 to 50 year old bush vines with yields of 3-5 tons per hectare were used to make this wine. The grapes were de-stemmed, sorted, crushed and then fermented in open top “kuipe” for 4 days. All the wine underwent malolactic fermentation in the barrel and a further 14 months of barrel aging. Tasting Notes: Deep, red colour with a strawberry and plum aroma and a touch of vanilla. Dark fruit on the palate with plum and blackcurrant being the focus and mocha flavours adding to the complexity. The wine finishes with a dry aftertaste.

Kleine Zalze Granite Selection Cabernet Sauvignon 2012

This ‘one barrel selection’ wine was crafted from a small portion of hard-rock granite soil from the famous Cabernet Sauvignon block on the hill, where the Kleine Zalze Family Reserve Cabernet Sauvignon originates from. Water retention in these specific rows is ideal, providing excellent drainage and balanced growth. Each bunch of grapes was hand selected according to pip ripeness. This wine was matured for 27 months in a new French oak Taransaud barrel before bottling. Tasting Notes: Waves of deep-piled forest fruit, a hint of rich, dark leafy and gamey notes with a pure, savoury, alluring combination of tomato leaf, black berries and cedar wood flavours on the palate. The 2012 vintage is a vintage of pure grape Cabernet fruit and delivers a long, lingering aftertaste with the white cedar oak tannin.

Kleine Zalze Granite Selection Chenin Blanc 2013

This ‘one barrel selection’ wine was crafted from a small portion of saprolite granite soil from a Helderberg mountain range. The grapes were from a 31 year old bush vine vineyard block which I saved from bulldozers. They were hand-selected and picked at 24,3 degrees balling, with a natural acidity of 7,52 g/litre with 3,49 pH. They were reductively crushed and given a 24 hour extended skin contact period before settling. Halfway through cold fermentation, at 12 degrees balling, the wine was racked into a Seguin Moreau Icon Burgundy barrel and spent, with fermentation, 16 months on the lees before bottling. Tasting Notes: Concentrated aromas of citrus-lime, herbs and winter melon fruit on the nose with fresh layers of apple on the palate. This magical finesse of fruit is well supported by the second fill French oak tannins that are well-integrated in the wine and gives this wine a tight, fresh and long, creamy, earthy finish.

Selected from the best Shiraz barrels of the 2011 vintage. The Mourvedre was fermented in small batches and aged in new oak for a year. The 8% Mourvedre was then blended with the Shiraz and returned to second fill barrels for a further year to allow the blend to marry. Tasting Notes: Great fruit concentration dominated by dark plum and spice with the Mourvedre sending a perfumed violet undertone. Balanced wood and fruit tannins provide a silky finish.

This 55 year old heritage vineyard grown on the granite soils of the Paardeberg is one of the rarest variants of Semillon as it only develops its “Gris” characteristics after 30 years. The grapes are hand-picked and then whole bunch pressed to French oak barrels for natural fermentation. I chose this as my CWG wine for its rarity, intrigue and harmony. Tasting Notes: Grapefruit pith nose with a spice focus of clove and saffron fronds. Floral high notes of chamomile and elderflower complement the textured, lengthy palate of peach stone and ginger powder leading to a taut finish.

Using a selection from high altitude cooler climate Jonkershoek vineyards, the major winemaking objective is to craft a wine that is both complex while young and yet has the capacity to evolve and mature admirably. Cold soaked for 4 days prior to natural fermentation using 25% whole bunches with no pressings included. The wine remained on gross lees for 9 months without SO2 in 50% new and 50% seasoned 500 litre French oak barrels. Total time in barrel, 16 months. Tasting Notes: Dark crimson, suggestively varietal. Brooding scents of sweet glazed fruit and dark cherry are released. Plush, well-rounded and balanced, sweet red-currant and cherry fruits. Nitida Gambit 2012

Wine from a good vintage and a selection of the finest barrels. Nitida has made a St Emilion style Merlot-dominant red blend for many years and these wines have always included a dollop of Cabernet Sauvignon. With this particular wine, we have intentionally left out the Cabernet Sauvignon to differentiate it from our flagship red. This wine highlights the unique terroir of Durbanville, with the very elegant tannins and great fruit expression associated with the area. Paul Cluver Auction Selection Pinot Noir 2012

The grapes were selected from our highest lying Pinot Noir vineyards and are all new clones – 67,113,115. Harvested, cold soaked for 6 days with the fermentation starting naturally and then inoculated. Punched down 3 times a day. After fermentation, only free run juice was transferred to barrel for malolactic fermentation. The wine was then left in barrel for 11 months before bottling. Tasting Notes: ‘Understated’ – the colour is gentle and alluring, the nose reticent but intriguing. All in all, captivating! Initially, red stone fruit combined with sweet cherry blossom fragrances dominate. Underlying, there are whiffs of raw meat and wet, warm earth. There are also hints of wild mushroom and pepper. The texture is astounding and where the power of this wine lies. The integration of oak adds to its finesse and aristocracy.

The wine was left on the gross lees for 9.5 months before racking, stabilisation and bottling. Tasting Notes: The first impression the wine gives is the expressive citrus characters on the nose. The palate is bursting with flavour, starting with lime notes and carrying through to a concentrated mid-palate with a very long, lingering mineral aftertaste.

The crop ripened simultaneously and the Merlot, Shiraz and Cabernet Sauvignon were picked in 3 days in the first week of March. The Petit Verdot was harvested 10 days later. The grapes were fully destalked and sorted. The components were vinified and matured separately. During fermentation, in open fermenters, the cap was punched down 4 times a day. Maceration for 7-25 days was followed by 22 month maturation in barrels. Bottled on 14 February 2013. Tasting Notes: Vibrant, deep ruby. Densely packed fruit aromas of cassis and raspberry. Dark chocolate and cedar with violets and spice complete. Dark currant with tobacco delivers a muscular punch. The lengthy finish shows dark fruit and savoury flavour. Rich style with powerful fruit and dry finish. This wine is packed in wooden boxes.

Saronsberg Weathered Hands CWG Shiraz 2008

The grapes were handpicked from low-yielding 20 year old bush vines grown in the Paardeberg, Swartland on east facing, weathered granite soils at 355 metres altitude. Intensive hand sorting was done on 90% of the grapes, while 10% was kept whole bunch. After a five day cold soak, fermentation was initiated. Extraction was done through manual punch-downs of the fermentation cap. Extended maceration on the skins followed fermentation, with a total of 22 days spent on the skins. The wine was then drained into new French oak barrels, where it completed malolactic fermentation. It was racked after 10 months and left for a total of 20 months in barrel. A coarse sheet filtration preceded bottling of the best barrel. Tasting Notes: Dark plum, ripe cherries, subtle spice and violet aromas on the nose are followed by a full-bodied palate with a silky texture and concentrated fruit core.

Simonsig Heirloom Shiraz 2012

Hand-picked in late March at 24.6? balling. After two days cold soak, fermentation and maceration lasted another 25 days, resulting in optimal extraction of colour, fruit and tannin. Malolactic fermentation took place in two new French oak barrels and the wine matured for 19 months before bottling. Tasting Notes: Bright, garnet-red colour. Attractive, sweet cinnamon and vanilla spices with deeper lying cacao, roasted coffee bean and lifted red berry perfume on the nose. The palate shows fragrant fruits of the forest and toasty French oak aromatics. The fine grained tannins are a sign of ripe fruit and gentle extraction from the skins. This wine is packed in wooden boxes.

Simonsig The Red Ox White Roussanne-Chenin Blanc 2013

Hand-picked Roussanne was cooled overnight, whole bunch pressed, fermented with natural yeast in third fill French oak and matured for 12 months on lees before being blended with the Chenin Blanc. The 14% Chenin is from the 2012 vintage and comes from old vines which were harvested at 23.8? balling. Oxidatively handled, with no sulphur added in the first year, the Chenin portion was fermented and matured in 5 year old French oak for two years before blending with the Roussanne. Bottled in February 2014. Tasting Notes: A blend of reductively made Roussanne and oxidatively vinified Chenin Blanc (14%). Citrus blossom fragrance with ripe yellow apple aromas and hints of sorrel. Palate entry is crisp with zesty natural acidity. Understated spiciness adds to the depth of flavour on the mid palate and a delightful minerality results in an intriguing twist on the finish.

Spier Auction Reserve Frans K Smit 2010

This wine was fermented in 400 litre roller barrels and a 1000 litre open top fermenter, followed by 24 months barrel maturation. A light egg white fining rounded off the tannin structure. Tasting Notes: Dark edged, this wine shows prominent ripe blackcurrant on the nose with hints of cassis and spicy undertones. It is full-bodied with layers of fruit and spice and a well-integrated tannin structure.

Strydom Family Wines Triple 7 Pinot Noir 2013

10% of the grapes was whole bunch fermented. Pump overs and punch downs were initially done every 5 hours, but towards the end only twice a day. Malolactic fermentation was in barrels with a total maturation time of 11 months in 30% new barrels. Tasting Notes: The wine has an enticing perfumed nose with spices and dried wild flowers. The palate is medium bodied and velvety soft with exotic flavours of black fruit, spices and mushrooms.

Tokara Tribute 2010

This wine is a blend of Cabernet Sauvignon wines from the two consistently best performing vineyards on Tokara. The grapes were hand-picked at optimal ripeness. The grapes were placed in a cold store overnight and then de-stemmed and sent across a sorting table before being crushed directly into large wooden fermenters where natural fermentation occurred. The wine spent a total of twenty two months in 67% new French oak. Tasting Notes: This wine displays a deep, dark garnet colour. The aromas are that of dark cherry and black currant fruit with notes of cedar wood and fennel bulb. The palate is full and rich with intensely textured tannins which are tight and grainy. The finish is intensely long, displaying surprising freshness. 60 cases of this wine were sold on the 2012 Auction.

Villiera Drip Barrel Merlot 2012

Ripe Merlot was partially crushed and fermented in a pump-over container to maintain the integrity of the skins. We were only interested in the drip barrels. This is the fermenting wine that drips out of the berries under the weight of the skins after drawing off. It is the heart of the wine. The juice is dark, clear, beautifully balanced and intense. The fermentation and malolactic fermentation completed in the French barrels and after 18 months of maturation, it was bottled. Tasting Notes: Intensely aromatic with forthcoming berry fruit and hints of chocolate, spice and vanilla. It is well-balanced with a velvety texture but with enough grip to ensure good length. The complexity will ensure that this wine should keep for up to 10 years.

Vriesenhof Cabernet Sauvignon 2007

Another 2007 Cabernet Sauvignon from a favourite Stellenbosch Cabernet vintage. This wine, unlike my previous wine on Auction is a blend of four 225 litre barrels, with a perfect marriage between cooper and vineyard for 30 months. Tasting Notes: The wine shows a perfect balance of grassy and charring wood aromas and flavours from top to bottom. A spicy red fruit character on the palate is confirming its promise – it will last for many years to come – if stored properly! This wine is packed in wooden boxes.

Waterford Estate CWG 2BB 2009

Selected vineyard parcels were fermented in 2000 litre stainless steel tanks. The blend was made post malolactic fermentation and aged for 26 months in medium toast French oak. Soft filtration prior to bottling. Tasting Notes: Aromas of cassis and pencil shavings characterise the aroma of this blend. On the palate there are firm, well-integrated tannins that are polished to perfection; leaving you with a long and classically dry finish.
