Ataraxia Under The Gavel Chardonnay 2015
Sourced from a single south-facing vineyard on The Skyfields, home to Ataraxia in the Hemel-en-Aarde located outside the coastal village of Hermanus. Painstaking fruit selection was followed by an extreme non-interventionist winemaking approach. Fermented in small, tight-grain French oak barriques, custom ordered from very specific Burgundian coopers, this wine was barrel aged for a further 9 months before being bottled.

Bartho Eksteen Vloekskoot Sauvignon Blanc – Wooded 2015
This oaked style nods towards Pessac-Léognan, but has a Cape character all of its own. Hand-picked, whole bunch pressed, no settling, naturally fermented in a 500 litre older French oak barrel, matured for 11 months on lees, bottled with minimum stabilisation and filtration. Enjoy with crayfish bisque, petit poulet and creamed spinach or alikreukel – three ways (ref. the CWG Book “Cellarmasters in the Kitchen”).

Beaumont Family Wines ‘Moerse Moer’ Chenin Blanc 2015
Since 2010 I have been bulk filtering the solids of my Chenin juice. This is the 2015 version. I always found fascinating herbal, acidic gritty flavours in these solids. So with the help of a bulk filter I cleaned up this juice and then fermented it in barrel for about seven months. Occasionally winemaking experiments produce something amazing. I love the Afrikaans description for when something is amazing it’s, “Moerse”! This was a “moerse lekker” portion of lees (also known as “moer” in Afrikaans).

Beyerskloof Pinotage 2014
The grapes were hand-picked at optimum ripeness. Fermentation took place over five days in open casks with punch-downs every two hours. The average fermentation temperature was 26°C. After malolactic fermentation in stainless steel tanks, the wine matured in new French oak for 20 months. Only the best Pinotage barrel was selected for this wine.

Boekenhoutskloof Syrah Auction Reserve 2014
Only two barrels were made from Syrah sourced from a tiny, unique parcel grown on decomposed schist soil at the Porseleinberg farm. Spontaneous fermentation took place in concrete fermenters with 10% whole bunches, the rest was destemmed but not crushed. The wine was matured for 18 months in older barrique.

Boschkloof Epilogue Syrah 2014
Harvested at around 24° Balling. 50% whole bunch. Fermented naturally in 500 litre, open French oak barrel. After fermentation, left on skins for another 20 days. Hand pressed with small basket press. Malolactic fermentation in barrel and the wine was matured for 16 months in 20% new French oak.

Cederberg Ghost Corner Semillon 2015
A reductive style. Cold crushed at 8°C with skin contact for eight hours. Only free run juice was used and then settled for two days at 10°C. 50% fermentation took place in stainless steel and 50% was fermented in a first fill oak barrel for four months. Weekly battonage in both barrel and stainless steel.

Cederberg Teen Die Hoog Shiraz 2014
Cold maceration for three days, inoculated with selected yeast strain and pump-overs every six hours with two punch-downs a day during peak fermentation. Fermentation at 25 – 28°C for about five days. 20 days of extended skin maceration and malolactic fermentation in new oak barrels. Barrel maturation took place in 225 litre medium toast, tight grain oak barrels for 15 months.

De Grendel Op Die Berg Pinot Noir 2013
Hand-picked fruit, nourished by the shale soils of the Ceres Plateau, was crushed before undergoing three days of cold maceration on the skins. It was then fermented in a stainless steel tank for approximately six days with gentle pneumatic punch-downs. The wine was then carefully basket pressed and transferred to 2nd fill French oak for malolactic fermentation on the fine lees, after which it was moved into other 2nd and 3rd fill French oak barrels for a maturation period lasting 12 months.

Edgebaston Cabernet Sauvignon Reserve 2013
This wine was made from a selected patch of earth in our GS vineyard, where the vines have very low vigour and give low yields. The small batch of grapes was fermented in an open tank with daily punch-downs. Malolactic fermentation and barrel maturation in a 300 litre new French oak barrel followed for 24 months before egg white fining, filtration and bottling took place.

Ernie Els CWG 2014
The grapes were hand-picked in the cool of early morning. Grape bunches were gently destalked and lightly crushed. On the sorting table, all excess stalks and rotten berries were carefully removed by hand. Fermentation took place in small 300 litre open top oak barrels with three weeks’ extended maturation. The wines were punched down manually five times per day ensuring maximum colour extraction from the skins. Each variety was separately vinified and blended after 18 months of maturation.

Graham Beck Wines Non Plus Ultra Cap Methode Cap Classique 2008
The Chardonnay and Pinot Noir were whole bunch pressed and only the cuvée fraction used. A small portion of Chardonnay was fermented in Piece Champenoise barrel to promote the creamy texture and complexity. The Pinot Noir adds palate weight and length of flavour. The wine was matured for 72 months on the lees prior to disgorgement. Note: This wine was sold at the CWG Auctions of 2014 = 60 cases and 2015 = 60 cases. All with different time on the lees and disgorgement dates.

This reserve Chardonnay is traditionally made using natural, wild yeast from the acclaimed Nine Yards Chardonnay vineyard. Intensely concentrated lemon-lime flavours and slow fermentation in 228 litre Burgundian oak barrels for twelve months has resulted in a classic style with a new world twist. Quartzite veins through the 600 million year old granite substrata provide the backbone for the mineral flavours. Regular barrel rolling accentuates the rich, leesy character in this elegantly expressive wine.

Jordan Sophia 2013
A blend of the best ‘Cobblers Hill’ barrels and a reserve Cabernet Sauvignon, this wine has been named ‘Sophia’ after the legendary mother of Faith, Hope and Charity. Representing the characteristics of the three Bordeaux varieties that make up this exceptional wine, the Cabernet Sauvignon, Cabernet Franc and Merlot grapes were harvested from the best hillside vineyards at Jordan, which overlook Table Mountain and False Bay. Fermented at 28°C with three pump-overs daily over the fermenting cap. After pressing, the wine was racked to barrel where it completed malolactic fermentation. The wine spent a total of 26 months in 225 litre French oak barrels to integrate the rich tannins and gain complexity.

Luddite The Broken Ankle Shiraz/Cabernet Sauvignon 2013
The Shiraz portion is from our oldest vineyard, fermented in open bins with hand punchdowns. Totally natural ferment. Pressed and allowed to finish malolactic fermentation in barrel. The Cabernet portion is from our own vineyards; very small berry so gentle punch-downs not to extract too much tannin. Pressed and sent to barrel. After malolactic fermentation, both wines were racked and the blend made up and returned to barrel for a further year’s maturation. Only second filled French oak barrels were used to allow the fruit to come to the fore.

The Trifecta Syrah comes from our three best Swartland vineyards. One Syrah vineyard is grown on Schist soil, one on Granite soil and one on Iron soil; bringing brooding structure, perfumed freshness and lush mid-palate to the wine. The grapes were hand-picked and whole-bunch fermented together naturally. The wine spent two years in barrel and 18 months in bottle before release. 2013 was a very perfumed and sophisticated vintage in the Swartland.

Neil Ellis Insignium 2013
Exquisite parcels of Bottelary Tempranillo and Piekenierskloof Grenache were vinified separately in open top fermenters. Towards the end of fermentation, the wine was racked into 100% new oak where the wine completed fermentation. After malolactic fermentation, individual components were classified and selected for inclusion into the 2013 Insignium blend. 17 months barrel maturation followed.

Newton Johnson Family Vineyards Seadragon Pinot Noir 2015
Seadragon is a parcel sourced out of a 1ha vineyard that is the heartbeat of the Newton Johnson farm. The bunches were selectively picked by the family, along a narrow contour of broken up claystone in the granitic soil. Made without sulphur in the winemaking, it allows diverse and dynamic micro-organisms from the grape itself to flourish unrestrained in the fermentation. 11 months maturation, with a further six months élevage in larger oak. Unfiltered, it will improve over many years in bottle.

Nicky Versfeld Double Barrel Semillon 2015
The grapes were harvested from 15 year old vines in late February 2015 and whole bunch pressed. The grape juice underwent natural fermentation in two 600 litre third fill French oak barrels and aged on the fermentation lees for eight months. This wine was bottled during November 2015.

Nitida Swan Song Sauvignon Blanc 2015
The grapes from pockets of vineyards on Nitida were hand-picked at different ripeness levels to best express the Nitida terroir. A portion of the wine was fermented in French oak barrels using only natural/wild yeasts. Thereafter the wine was left on the lees for four months to enhance the typical varietal characters. The final blend is made up of 68% barrel fermented (10% 1st fill barrels) and 32% tank fermented Sauvignon Blanc.

Paul Cluver Auction Selection Pinot Noir 2014
The grapes were sourced and selected from our highest lying mountain vineyards on De Rust Estate and are all new clones (667,113,115). After harvesting at night, the grapes were destemmed and transferred without pumping to four ton wooden fermenters, cold soaked for nine days with the fermentation starting without inoculation. Punched down twice a day and after fermentation only free run wine was transferred to 300 litre barrels for maturation. The wine was then left in barrel for 11 months before bottling.

Paul Cluver The Wagon Trail Chardonnay 2015
The grapes were selected from 28 year old Chardonnay vineyards, the oldest on the property in Elgin. After whole bunch pressing, the juice was settled naturally. The juice was then transferred to barrel for fermentation without inoculation. The barrels used for this wine are from selected Burgundian cooperages, one third was new wood. The wine was left on the gross lees for nine months before racking, stabilisation and bottling.

To ensure maximum fruit and colour retention, the grapes were hand-picked in the cool of the night. The crushed berries were given a 48 hour cold maceration prior to fermentation. Manual punch-downs were done three times a day to extract tannin and colour. Skins were pressed at 5° Balling. Malolactic fermentation took place in barrels. Matured for 22 months in one new and one second fill French oak barrel.

Saronsberg Die Erf Shiraz – Grenache – Mourvèdre – Viognier 2011
The grapes were hand-picked from low yielding vines in the early morning hours, forcecooled, hand-sorted and transported by gravity to open top fermenters. An average of three day cold-soaks preceded separate fermentation of the various cultivars. Four punchdowns were done per day and one pump-over. After fermentation the wine went through malolactic and was aged for 22 months in new French oak barrels. The best barrel of the various cultivars was selected and one barrel blended. No filtration.

Saronsberg Sneeusig Shiraz 2012
Grapes hand harvested from low yielding vines grown on weathered shale soils were picked in the early morning hours, force-cooled, hand-sorted and transported by gravity to an open top fermenter. A three day cold-soak preceded fermentation which was allowed to start naturally and inoculated half way with D254 yeast. Five punch-downs were done per day. After fermentation the wine went through malolactic fermentation and was aged for 20 months in new French oak barrels. The best barrel of this vineyard was selected.

Silverthorn Wines Big Dog II Méthode Cap Classique 2011
Both the Chardonnay and the Pinot Noir were picked by hand and then gently whole bunch pressed. The Chardonnay juice was barrel fermented and aged in large old French oak barrels to enhance the creaminess and complexity and add palate weight. The Pinot Noir juice was tank fermented in order to accentuate the bright berry characters. After blending, the wine was bottle fermented and aged on the lees for 53 months. After disgorging the wine was aged for a further six months on the cork.

Chardonnay grown on weathered shale soil on the estate was whole bunch pressed and the cuvée was fermented in seasoned French oak. During winter only three barrels of outstanding quality were selected out of a total of more than 100. Matured for 15 months on the primary yeast lees and bottled. Cellared on the yeast sediment in the bottle for four years and disgorged in April 2012. Matured on cork for another four and a half years. Chêne means oak.

Strydom Family Wines The Expatriate Cabernet Sauvignon / Shiraz 2013
The Cabernet is selected barrels from two different vineyards and the Syrah is a special vineyard growing on the slopes of the Helderberg mountain. Both varieties were pumped over and punched down 5 times a day in open top fermenters; with a total time of 15 days’ maceration on skins prior to pressing. Malolactic fermentation was in barrel. The Cabernet Sauvignon was matured in new barrels and the Syrah in a 3rd fill barrel. Blending was in June 2014 and bottling December of the same year.

The Drift Farm Kindred Shiraz/Malbec/Barbera 2014
The most important winemaking decision happened many years before the first grape for this wine was ever harvested. It was a decision of what type of grape to plant where, and in what specific way. To this extent, this wine was conceived and dreamt about over 15 years ago. We chose specific clones of specific varieties, married them to specific rootstocks, planted them on carefully prepared soil, in particular sites on a unique farm. Tokara Siberia Chardonnay 2015
The grapes were hand-picked into small shallow picking crates and placed in a cold store overnight. The following day the cold grapes (6°C) were whole bunch pressed to a stainless steel tank for overnight settling. The settled juice was moved to barrel for fermentation which took place spontaneously. The wine spent a total of 11 months in 228 litre barrels of which 33% were new. Only sulphur dioxide was used in the production of this wine, there was no fining, stabilisation or filtration.
