Groot Constantia Gouverneurs Auction Reserve 2014
The grapes were harvested at optimal ripeness of about 24 to 25° balling.
Fermented in
stainless steel tanks with four pump-overs daily for
maximum extraction. Post fermentation maceration was conducted for four
weeks on the skins. Wines were pressed and kept in tanks for malolactic
fermentation. The wines were then put in barrel consisting of 85% new French
oak for a period of 18 months before blending and bottling.
