Neil Ellis Auction Reserve 2007

Exquisite parcels of Jonkershoek Valley fruit were separately vinified in open top fermentors. Towards end of fermentation, the wine was racked into new oak where it completed fermentation. After malolactic fermentation, individual components were classified and selected for inclusion into the 2007 Auction Reserve blend. 16 Months barrel maturation followed. Tasting note: Concentrated deep red colour. An already complex bouquet combines clean and rich blackcurrant, blackberry and a touch of vanillin oak. The amalgam of fruit flavours including plum, mulberry, redcurrant and blueberry is backed with just the right amount of clean oak. Long and persistent. Finely poised wine expressing the characteristics of the Jonkershoek Valley.
