Simonsig Mediterraneo 2015

The grapes were hand-picked in small crates and chilled overnight before whole bunch pressing yielded only the free run juice. All three varieties were fermented in seasoned French oak using natural and cultured yeast. Fermented and matured on the primary lees with some battonage for nine months before blending and bottling. Gentle handling and minimal interference preserved the full potential of the delicate flavours.
