Both varieties were harvested in mid February 2009. The Sauvignon Blanc was fermented in stainless steel tanks and left on fine lees for 10 months. The Semillon fermented in 300 Litre French oak and aged on fermentation lees for 8 months. Tasting note: This classic blend has a focussed duration of flavours reflecting the cool coastal origin. A bright complex taste of lime, fig and peach and a waxy long finish.
